A good friend is over for dinner and every time he is over we end up ordering pizza as all my recipies seem to use onion and/or garlic and they don't taste as good without. Meat and veg roasts are out as I am a vegetarian. It's so hard to find store bought saucces without onion or garlic (and I am shopping online anyway so can't check).

I would like to cook a nice, fairly straightforward vegetarian dish for him that doesn't contain onion or garlic. Any ideas?

Why don't you try this simple pasta dish?

Pasta with spinach and nuts for 2 people:

- Pasta for two people (Penne is good)
- A small tub of sour cream
- Feta cheese
- Half a cup of walnuts
- 200 grams of baby spinach
- 100 gr mushrooms
- 50 gram of blue cheese (optional)
- Green herbs (basil! preferably fresh) .
- Salt /pepper

* Cook pasta as indicated on package.
* Slice mushrooms
* In separate pan (I always use the wok), add sour cream, blue cheese and sliced mushrooms. Leave on medium heat (don't bring to boil!!!). If to thick, add milk.
* Simmer for ten minutes and bring to medium-low heat
* add baby spinach (wash first!)
* add salt pepper to taste
* add green herbs (always last, as some turn bitter when heated to long)

Sauce is done

Scoop pasta on plate, add sauce and sprinkle with walnuts (crush them a bit) and feta (which you rub fine in between your fingers).

Done! Enjoy!

It gets better, b/c over time you will find things that you like to eat. Not all brands of the same products taste the same, so try different brands and flavors. I love hummus, but there are certain brands that I cannot stand(the texture and taste are not good). I prefer Sabra, as it is smoother, and a bit sweeter than other types. Try different flavors as well, I hate lemon and spicy, but love plain and garlic. Soy milk is the same deal. Some brands are gritty(in my opinion), and do not taste good. I prefer Soy dream, Silk, and oddly enough costco, and Shop rites generic brands. I also find that the refrigerated ones taste better than the ones sold warm on the shelves. You may also want to try Rice milk. I like RiceDream, and no other brand. I would suggest getting a bunch of recipes and trying them out. I never eat salad, as I do not like the taste. Just b/c you are vegetarian does not mean you have to eat salad and tofu. If you take a few recipes here and there, you'll soon have loads. I look online, and get books from the library and simply copy the recipes I like. Being vegetarian is not hard. A little creativity is sometimes involved. For example, I used to love tacos. Instead of using ground beef, I use lentils, beans, or sometimes the fake meats. Many recipes can be modified and made vegetarian. Here is a tasty snack you can make: *Zucchini Bread* Ingredients 3 eggs 1 cup vegetable oil 2 cups white sugar 2 cups grated zucchini 2 teaspoons vanilla extract 3 cups all-purpose flour 3 teaspoons ground cinnamon 1 teaspoon baking soda 1/4 teaspoon baking powder 1 teaspoon salt 1/2 cup chopped walnuts -Preheat oven to 325 degrees F. -Grease and flour two 8x4 inch loaf pans. -In a large bowl, beat eggs until light and frothy. -Mix in oil and sugar. Stir in zucchini and vanilla. -Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. -Divide batter into prepared pans. -Bake for 60 to 70 minutes, or until done. Another recipe *"Chicken” Nuggets"* 1 14-ounce package of extra-firm tofu 1/2 cup bread crumbs 1/2 teaspoon garlic powder 1/4 teaspoon pepper salt, to taste 1/2 cup water -Unwrap the tofu and shake off any excess moisture. Place the tofu in a freezer bag or wrap well in plastic, then freeze the sealed tofu for at least 24 hours. -The next day, thaw the tofu by placing it—unwrapped—into a microwave-safe bowl. Cover the bowl and microwave on high, checking every 2 to 3 minutes to make sure the tofu doesn’t cook. Once thoroughly defrosted, gently squeeze out any excess moisture and cut into 1-inch cubes. -Preheat the oven to 350°F. -In a shallow bowl, add the bread crumbs and spices, mixing well. In a separate bowl, pour 1/2 cup of water. -Dip each piece of tofu first into the water, lightly shake off any excess water, and then coat with the seasoned bread crumbs. -Put the breaded tofu cubes on a lightly oiled baking pan and baked 25 to 30 minutes, until golden brown and crisp. Recipes 3 *Vegetable wrap* Use any vegetables you like. I prefer romaine lettuce, shredded carrots, red onion, and tomatoes. I sometimes add alfalfa sprouts. Get a whole wheat wrap and spread humus in the wrap. Top with vegetables.

Don't know if you are in the UK or the US? Jamie Oliver does a really good vegetarian recipe for Sainsbury's and it can be found on their website. It's butternut squash with chestnuts, panchetta (which you could certainly leave out!) and sage. It's wonderful but when I made it I added roasted on the vine cherry tomatoes and sweet potatoes and served it with cous cous. Easy to cook and very simple and delicious!

Coriander and Lemon Couscous

100g couscous
1 lemon
1 tablespoon finely chopped coriander
salt and pepper
vegan mayonnaise

Soak the couscous in boiling water according to the packet instructions until it is soft.

Squeeze in the lemon juice and add the coriander.

Stir and then add salt and pepper to taste.

Just before serving add in a few tablespoons of mayonnaise and stir well with a fork.

Sun Dried Tomato Pasta

50g pasta
2 medium mushrooms
vegetable oil
1 tsp sun dried tomato paste
1 tsp mixed herbs
black pepper
1 tbs vegan mayonaisse

Cook the pasta until it is just soft.

Meanwhile chop the mushrooms and fry in the oil until they start to brown. Add the sun dried tomato paste and mixed herbs and stir well. Tomato paste also works for the recipe but you may want to add some garlic to give it more flavour.

When the pasta is ready drain and add the sun dried tomato mixture and stir well. Serve and cover generously in black pepper and a spoonful of mayo.

This serves 1 person but can easily be adapted for more.

Roasted Red Pepper Tarts

Ingredients

vegan puff pastry
red pepper
sun dried tomato paste

Pre heat the oven to 200 degrees.

Grease a baking sheet. Roll out the pastry and cut out with a pastry cutter. Spread with a thin layer of sun-dried tomato paste and top with thick slices of the pepper.

Bake in the oven for 10 minutes until the pastry has risen

Use jalapenos or chillis to flavour your cooking up. Make penne ariabiatta, google for recipe.
