Really the question is about the instant pie crust. It says "wrap excess top crust under bottom crust edge, and i get that, but then it says press edges together to seal; flute. What the heck does flute mean??

It means to make a decorative edge on the rim of a pie crust either with the tips of your fingers or by using a fork.

You can use a fork to do this, or your fingers, fluting is the act of pressing the two crusts together to seal. Remember to vent the top crust. (small cuts to let the steam vent),

Fluting is pinching the edge crust in a decorative manner or pinching a second crust to seal pastry together...

If you look at a picture of an apple pie, you'll notice that the edges are wavy. This is what flute is; it's not sealing it.
