Thanks Jackbutle.. Not to worried about carbs though. I'm afraid to tell you what I put on them...LOL. Maple Syrup, Butter, Powdered Sugar and Whipped Cream...cringes ;)

I ended up using 2/3 cream, 1/3 water. I think I could have gone alot less than that. But still awesome!

you could, you will get a thicker batter which can always be thinned with a little water. use the same amount as you would milk....yummmmm

If you use whipping cream, reduce the amount of oil you put in your batter, because there's a lot of butterfat in whipping cream. If you have evaporated milk, you can use that instead. Try separating the eggs and beating the whites, then folding them in to the final batter. Makes a lovely light pancake.

Whole milk contains approximatley 3.6 % butter fat -[ it's actually 3.4% but 3.6 makes the math easier
whipping cream contains approximatley 36 % butter fat ]
so 9 parts water to 1 part cream will work
You know that there are 2 Tablespoons to a liquid ounce

If you use cream and substitute a whole grain flour -- whole wheat, flx, etc, and sugar substitute for the sugar -- you'll have a low carb treat. I would use the same amount of cream as is called for milk.

The cream will make it taste great and it'll be better for you than regular pancakes, especially if you put fruit on it, instead of maple syrup..

Yes, it will work, but consider the fat content. I would thin the cream with water.2/3 Cream 1/3 water.
