There's no meat in this one, but it's the closest I've tasted to a dish I love & order at a favorite Italian restaurant in California.

BAKED PENNE WITH MUSHROOMS AND CHEESE
Pasticcio di penne alla valdostana Valle d'Aosta

1 lb mushrooms, cleaned and thinly sliced
1 garlic clove, peeled, whole
4 T butter
salt and freshly ground black pepper
10 oz penne (about 2 1/2 cups dry pasta) - or mostaccioi, ziti, etc.
3 oz Bel Paese cheese, thinly sliced or cubed - or any creamy, mild cheese (Fontel)
1/3 cup freshly grated Parmesan cheese
3/4 cup heavy cream or half and half

Sauté the mushrooms with the whole garlic clove in 2 tablespoons of the butter over a high heat. Add salt and pepper, lower the heat and cook for 3 minutes. Discard the garlic.

Cook the pasta as usual. Drain and dress with the remaining butter.

Butter an ovenproof dish and cover the bottom with a layer of penne. Distribute about a quarter of the mushrooms and the sliced cheese evenly over the pasta and sprinkle with 1 tablespoon of Parmesan.

Add another layer of pasta and cover with mushrooms and cheese as before. Repeat until you have used all the ingredients, finishing with a layer of sliced cheeses.

Pour over the cream, sprinkle with salt and pepper and bake, covered with foil, in a preheated oven at 400° for 10 minutes. Bake uncovered for a further 10 minutes, or until a light crust has formed on the top. Remove from oven and allow to rest for 5 minutes before serving.

Simple, m'dear. Some foods are best left simple, and baked pasta is usually one of them.

Your usual spaghetti, slightly undercooked. Your usual sauce, though slightly more of it.

Bung in oven covered with various cheeses; 375 for 25min will usually do it.

You want more sophisticated? Eh. Kids these days!

farfalle
alfredo sauce (real)
artichoke hearts
red pepper strips
sliced black olives

Bake until bubbly and _just_ starting to brown.

Or -- healthy? And, like an actual recipe recipe, not just a theme somebody's been following for years? Sheesh. But, here you go:

BAKED PENNE WITH BROCCOLI AND THREE CHEESES
http://www.epicurious.com/recipes/recipe_views/views/107638

Yeah, yeah -- don't just look it up. And, believe me, I feel your pain about that one. But I really have made this, a couple of times now, and swear it provides all the goodness of a pasta bake with being not hideously bad for you. The broccoli is a _pleasant_ addition, not just in there as a token vitamin provider; the flavours combine very well. It's almost lasagna-ish!

Pasta Delight

Ingredients

200g pasta
1 courgette
1 red onion
1 red pepper
olive oil
4 fresh tomatoes
sun-dried tomato paste
nutritional yeast
¼ pint soya milk
2 oz vegan margarine
plain or sauce flour
salt and pepper

Cook the pasta as per the instructions on the bag. Drain and set aside.

Cut the courgette, onion and pepper into small chunks and fry in the olive oil until golden brown. Prick the tomatoes and place in a bowl of boiled water for five minutes. Carefully remove them and peel away the skins. Then chop them up and add them to the vegetables. Add a teaspoon of sun-dried tomato paste to the vegetable mixture and stir thoroughly. Taste the mixture and season if necessary. Mix the pasta with the vegetable mixture and spoon into a large oven proof dish.

Melt the margarine in a saucepan and add a teaspoonful of flour to thicken. Continue to add flour until it is the consistency of porridge. Then slowly stir in soya milk and stir until the mixture is smooth. Then add three tablespoons of nutritional yeast, salt and pepper and stir again until smooth. Taste the sauce and add more salt and pepper if necessary and then pour it over the pasta mixture. Bake in a moderate oven for 30 minutes.

I've made good pasta recipes, but I don't know about fantastic. Thanks for the cute Q! I'm here for the Answers! :)
My husband & I liked this one... it's light & healthy, I don't know if you would consider it "knock your socks off" fantastic. Plus, you don't bake it.
Angel Hair Pasta w/Chicken.
Ingredients:
2 Tbsp olive oil, divided
2 skinless, boneless chicken breast halves, cut into 1" cubes
1 carrot, sliced diagonally into 1/4" pieces
1 (10 oz) package frozen broccoli florets, thawed & drained
2 cloves garlic, minced
12 oz angel hair pasta
2/3 cup chicken broth
1 tsp dried basil
1/4 cup grated Parmesan Cheese (more if want cheesey)
serves 4
1. Cook chicken in 1 Tbsp oil over medium heat in a medium pan. -about 5 minutes, then drain on paper towel, set aside.
2. Begin heating water for pasta. Then heat 1 Tbsp oil in same skillet chicken was in. Add carrot & stir fry, cook for 4 minutes. Add broccoli & garlic to carrots; cook, stirring for 2 minutes longer.
3. Cook pasta. While pasta is cooking, add chicken broth, basil & parmesan to veggies. Return chicken to skillet. Stir all to combine. Reduce heat & simmer for 4 minutes.
4. Drain pasta & place in large serving bowl. Top w/chicken & veggie mixture. Serve immediately. (Very figure friendly & health smart!) P.S. variation: substitute 10 oz package frozen peas for the frozen broccoli & 1 cup chopped cooked ham for the chicken.
Good luck on finding a recipe that hits the spot!
Good point by Kmen. I trust alot of websites (Kraft foods.com, Bisquick.com & Campbells.com, etc.) for Great recipes. Lasagna recipes would be great, too!
