Easy Bread Pudding
Ingredients
4 cups Cubed day-old bread, such as raisin, sourdough, or oatmeal
2 cups Skim milk, scalded
3/4 cup Each: fat-free egg substitute, packed dark brown sugar
1 tsp. Vanilla
1 tsp. Brandy or rum, optional
Confectioners' sugar, optional
Preparation
Heat oven to 350F. Coat a 2-quart nonstick baking dish with cooking spray. Place cubed bread in baking dish and set aside. Combine milk, egg sub, brown sugar, vanilla, and brandy and pour over bread cubes in dish. Bake for 35-40 minutes, or until set. Cool on wire rack for 10 minutes. Lightly dust with convectioners' sugar, if desired.
Cook's Notes
This is delicious served warm or cold. Low-fat, as well-155 calories and 1g fat per serving.

Croissant Bread Pudding
1 can (14 ounces) sweetened condensed milk
5 to 6 cups torn croissants, about 6 ounces
1 can (15 ounces) fruit cocktail, apricot slices, or sliced or diced peaches in juice or light syrup, undrained
1 teaspoon ground cinnamon
2 eggs, beaten
Combine all ingredients and stir until well blended. Pour into a greased 9x5-inch loaf pan. Bake at 350° for 30 to 40 minutes, or until browned and set.
Serves 6.

take crust off 1/2 loaf white bread, butter each peice on both sides.
Mix 1 1/2 cups milk, 1 beaten egg and a heaped tablespoon of custard powder in a jug.
Layer slices of bread with sprinkled sugar and cinnamon btween each layer. Pour milk mixture over top and cook until brown and yummy.
You can add dried fruit in between layers too if you wish - sultana's, apricot, apple.... the opportunities are endless.

"Bread Pudding" - 8 servings
3 eggs
3 cups milk
1/2 cup sugar
1 tbsp. vanilla extract
1/4 tsp. salt
4 cups soft white bread cubes
1/2 cup raisins or chopped, pitted dates
Whiskey Sauce
Preheat oven to 325*. Butter (1 1/2-quart) casserole. In large bowl with wire whisk, beat eggs until frothy. Beat in milk, sugar, vanilla and salt until combined. Stir in bread cubes and raisins; let stand 5 minutes. Stir again; pour mixture into prepared casserole.
Set casserole in baking pan; place on oven rack. Add boiling water to baking pan to reach halfway up side of casserole. Bake 1 1/2 hours or until knife inserted near center comes out clean. Serve warm with Whiskey Sauce.
(TIP: Soft bread makes a creamier pudding; firm-textured bread yields a firmer pudding.)
WHISKEY SAUCE:
1/2 cup butter or margarine
1 cup packed brown sugar
1/3 cup bourbon
1/4 tsp. ground nutmeg
In 1-quart saucepan over medium-high heat, heat all ingredients to boiling. Serve warm over Bread Pudding. Yields 1 cup.
