cheesy sauce!

Try a cheesy bechamel sauce like this:

1 tbs butter
1/4 cup plain flour
2 cups milk
1/4 cup grated parmesan
1/4 cup grated tasty

melt butter. Mix in plain flour, cook for 1 minute over med heat. Take off heat, add 1 1/2 cups of the milk and stir in ( the butter will make lumps in the milk at this stage so don;t worry if it is lumpy) but back on heat and stir constantly until thickened. Do not stop stirring or you will end up with burnt milk. Add cheese and stir. If it is too thick add the other 1/2 cup milk. If it is a good texture leave the rest of the milk out.

You can use any cheese except mozzarella.

Macaroni 'Cheese'
Ingredients

100g macaroni
soya milk
2 tablespoons nutritional yeast
1 teaspoon vegan bouillon powder
vegetarian worcestershire sauce (optional)
knob of vegan margarine
salt
pepper

Cook the macaroni by boiling it in salted water for 15 mins (or follow guidelines on packet). Then drain and cover the bottom of the pan with soya milk. Add the other ingredients and stir well, then simmer for five minutes. The pasta should now be coated with sauce and if it isn't add more milk. Add salt and pepper to taste.

I like to use a simple tomato sauce with garlic and mushrooms. I think sauce comes out better if you make it yourself.Or get a head start by buying some of the cheap cans of regular spaghetti sauce and add things to it like hamburger, sausage, peperoni, onions, peppers, and 1/2 to 1 whole cup of sugar to take out some of the acid out and make it a little bit sweet. (add it to your taste that's just what I use) and there you have it, a really good sauce to go with macaroni

Cheese sauces are classic. Start with a Bechamel and go from there. Pesto might be good, as would simple butter and garlic. Also, if you want something a little simple and quick, don't sauce it. Fry it with butter and little pieces of ham and serve with ketchup and parmesan. It's very yummy.

An Alfredo sauce is yummy.

4tbbutter
1/2cheavy cream
6tbparmesan cheese
1tbflour
1xsalt, to taste
1xpepper, to taste
Directions:
Combine ingredients in saucepan, cook & stir (DO NOT BOIL!) until it looksand feels like Alfredo sauce.
