I understand the concept of once or twice removed, but that works with respect to younger generations. What are older generations recognized as?

Aunts and uncles are your parents' siblings, NOT cousins. Also, they can't be another ordinal numbered cousin since that would mean a higher generation which you're not part of. Comon guys.

Your second cousin's parents would be your first cousins and your 3rd cousin's parents would be your 2nd cousins. So you just call them your cousins.

They would be your 1 or 2nd cousin's. Or in some cases a great aunt and uncle

They are all cousins except for the first which is Aunt and Uncle.

I would call them aunts and uncles, that is only if you see them often and are close in your life
