there have always been people who dont believe in god. they just went by other names than "athiest", and they usually worshipped something that they could see.
modern day athiest dont believe in god(hence the name athiest), and they tend to worship( in more of a metaphorical sense) physical things as well.
i didnt believe in god for quite some time, but now it just seems so obvious that there is something that goes so far beyond anything that we are capable, or ever will be capable, of understanding.
ps. i somehow doubt that the flying spaghetti monster is the entity in question, though the idea is an amusing arguement.
