I am buying a balloon frame three story house. One thing I don't like are the relatively low, 7.5-8 foot ceilings, which are covered with sheet rock. (i think.) Can I remove the sheet rock and expose the beams? Is this commonly done? I don't know much about construction. Any thoughts or examples I can see? Thanks!

It is not commonly done, other than in loft apartments. If it is an older house (pre plywood) it can look very neat. With plywood it will work, but won't be as impressive. Removing the sheetrock will also let sound travel farther, and you might uncover pipes and wiring going to the upper rooms. If this doesn't bother you, go for it

darts to get a ballon off the ceiling? so 1970's! get yourself a hi power double shot gun. That will not only bring down the balloon, it will probably will take half the ceiling down. don't worry about the crowd, The sound alone will scare 'em to the ground.
