All of these recipes are good. A tip: Use a jar of cool tap water to drop a little in. When it forms a ball and goes to bottom it is ready to spoon onto pan. BUT......DIVINITY WILL NOT FORM IN DAMP WEATHER.............I'M FROM THE SOUTH SO HUMIDITY PLAYS A HUGE ROLE IN COOKING!

DIVINITY CANDY
2 1/2 c. sugar
1/2 c. water
1 c. chopped pecans
3/4 c. white corn syrup
1 tsp. vanilla
2 egg whites
Mix sugar, corn syrup, water and vanilla in saucepan. Stir over low heat until sugar is dissolved, then cook without stirring to 260 degrees, or until a little dropped into cold water forms a hard ball. Remove from heat and pour, beating constantly, in a fine stream into beaten egg whites. Beat until mixture holds its shape, fold in nuts. Drop quickly from tip of a buttered spoon, onto wax paper in individual pieces. Makes 48 pieces.

"Divinity" - 4 dozen
2 2/3 cups sugar
2/3 cup light corn syrup
1/2 cup water
2 egg whites
1 tsp. vanilla
2/3 cup broken nuts
Stir sugar, corn syrup and water over low heat until sugar is dissolved. Cook, without stirring, to 260* on candy thermometer (or until small amount of mixture dropped into very cold water forms a hard ball).
In mixer bowl, beat egg whites until stiff peaks form. Continue beating while pouring hot syrup in a thin stream into egg whites. Add vanilla; beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for mixer.) Fold in nuts. Drop mixture from tip of buttered spoon onto waxed paper.
(TIP: Use 1 tbsp. less water on humid days.)
"No-Cook Divinity" - 5 to 6 dozen candies
1 (7.2 oz.) pkg. fluffy white frosting mix
1/3 cup light corn syrup
1 tsp. vanilla
1/2 cup boiling water
1 (16 oz.) pkg. confectioners' sugar
1 cup chopped nuts
Combine frosting mix (dry), corn syrup, vanilla and boiling water in small mixer bowl. Beat on highest speed until stiff peaks form, about 5 minutes. Transfer to large mixer bowl; on low speed or by hand, gradually blend in confectioners' sugar. Stir in nuts.
Drop mixture by teaspoonfuls onto waxed paper. When outside of candy feels firm, turn over and allow to dry at least 12 hours. Store candy in airtight container.

mmmmmm my favorite!
Pick a dry day to make it, humidity will screw it up! Having a stand mixer is very very handy for making this too!
