"Creamy Guacamole" - 2 cups

3 ripe avocados
Juice of 1 lime
1 small onion; chopped
1 crushed garlic clove
1/2 tsp. pepper
1/2 tsp. salt
1/2 cup salsa (store-bought or Pico de Gallo, below)

Peel and chop avocados and place pieces in small mixing bowl. (Reserve 1 of the avocado pits.) Using a fork, mash avocados until you have a creamy mixture; stir in lime juice. Add onion, garlic, pepper and salt; mix well. Add salsa. Serve or refrigerate. Put the reserved avocado pit in the guacamole to slow the browning process.

PICO DE GALLO (Fresh Salsa):
3 to 4 medium-size tomatoes; chopped (approximately 2 cups)
1 small onion; finely chopped
1 crushed garlic clove
1 jalapeno; seeded and minced
1/3 cup cilantro (parsley)
1/2 tsp. salt
Pepper to taste
Juice of 1/2 lime

In a small mixing bowl, combine all ingredients. Cover bowl with plastic wrap and refrigerate for at least an hour to allow flavors to blend. This salsa is best served fresh, though it keeps for 2-3 days covered in the refrigerator.

Ripe avocado, this is very important, if it is under-ripe it taste like wood, if it's overripe it tastes soapy. Mash a three quarters of the avocado while adding lime juice, salt, jalapenos(chopped very finely and if you want it to be very hot chopp with some seeds) a little cilantro, chili powder, garlic(minced), an garlic powder. Take the last of the avocado and chop small, mix in with something that will not break it up.
If you want to keep it from going brown mix in a little sour cream(the enzymes will help keep it from turning brown), keep the seed in the dip (and serve it in the shell if you are doing individual nachos, or are doing a small dinner), also the salt and the lime will keep it bright! I do all this and my guacamole stays green for days. It should be served fresh though.

Guacamole is super easy. Buy really ripe avocados, 2 or 3 depending on how much guac you want. Mash them in a bowl, toss in some diced tomato (one small one), some finely diced onion (about half a small one), a clove of minced garlic, juice from one lime or lemon, whichever you have (but this step is important... it keeps it from turning brown, and it won't taste right without the juice!), some chopped cilantro if you like it, salt, and pepper. I make mine special by crumbling a little queso blanco, which is a soft white mexican cheese, on top. I have never had leftover guacamole.

This may not seem like a real recipe, but the thing about guacamole is that you really have to go with your taste. If you like it less chunky, put less tomato and onion. If you like it with a more complex flavor, add lots of cilantro and lime zest. Trust your tongue!

1 large avocado, scooped out of shell and mashed
2 tablespoons sour cream
1 tablespoon salsa
1 garlic clove, pressed
1 tablespoon sweet onions, finely diced
1 teaspoon cilantro or parsley (note, some people find it vile)
1 tablespoon tomatoes, finely diced
2 teaspoons black olives, minced
1 teaspoon fresh lemon juice or lime juice or balsamic vinegar
salt, use less if you'll refrigerate (you shouldn't need much)

1. Cut the avocado in half, scoop out the flesh with a spoon, mash 3/4 of it well and chop the remaining 1/4 coarsely (I do this with the spoon, in the avocado shell, before scooping the last bit out). Mix it into the mashed portion.
2. Mix all ingredients together.
3. Serve immediately, or cover with plastic wrap, pressing wrap firmly to surface of guacamole (or it will turn color) and refrigerate up to 4 hours before serving.

GUACAMOLE

2 tbsp. extra virgin olive oil
1 tomato
2 tbsp. cilantro leaves
1 small green bell pepper
2 tbsp. finely chopped onion
salt and pepper
4 drops tabasco sauce

1. Halve the avocados and remove the pits. Scoop out and puree the flesh, adding the lime juice and the olive oil.
2. Peel and dice the tomato. Finely chop the cilantro. Chop the green pepper and remove the seeds.

3. Mix all the ingredients well, cover, and refrigerate until ready to serve.

Classic Guacamole

Makes 8 servings

Ingredients:

4 avocados, seeded and peeled
2 tablespoons lemon juice
1 clove garlic, crushed
1 tomato, finely chopped
1/4 cup finely chopped onion
1/4 teaspoon ground cumin
3 drops hot pepper sauce
tortilla chips

Preparation:

Using a fork, coarsely mash avocado with lemon juice and garlic. Stir in remaining ingredients to blend.

Garnish as desired and serve with tortilla chips.

there is a mix you can buy called great guacamole it's really cheap. follow the directions and add 2 tsps of real mayonaise. it is the best and it's really easy. no chopping. If you like garlic yo can add a little garlic powder too. about a 1/4 - 1/2 tsp

GOURMET GUACAMOLE

salt to taste

anyone putting cayanne or hot sauce in guacamole is a hack and has no idea wtf they are making
