CHERRY BOURBON BALLS
1 cup semisweet chocolate chips
1/2 cup bourbon
1/4 cup corn syrup
3 cups crushed vanilla wafers
1 1/2 cups ground walnuts
24 candied cherries, halved
1/2 cup confectioners' sugar
In the microwave oven or over a double boiler, melt chocolate chips, stirring occasionally until smooth. Remove from heat and stir in the bourbon and corn syrup.
In a medium bowl, toss together the crushed vanilla wafers and ground walnuts. Pour the chocolate mixture over the crumbs in the bowl and blend well using your hands. Shape into 1 inch balls and press a cherry half into the center of each one. Roll each cookie in confectioners' sugar to coat.
Store in an airtight tin for at least a week before serving.
STICKY BALLS
2 tablespoon Margarine
½ cup Pitted And Chopped Dates
¾ cup Granola
3 tablespoon Instant Nonfat Dry Milk
¼ cup Walnuts, Finely Chopped
Heat the margarine in a saucepan until melted. Add the dates and continue to heat until softened. Remove from the heat and stir in the granola and dry milk. Cool and roll into balls then roll the balls in the nuts. Store in the refrigerator until serving time. Serve at room temperature.

INGREDIENTS:

1 cup finely chopped pecans
1 cup confectioners' sugar
2 tablespoons unsweetened cocoa powder
1/4 cup bourbon
1 tablespoons plus 1 1/2 teaspoons light corn syrup
confectioners' sugar, sifted
PREPARATION:
Thoroughly combine 1 crushed vanilla wafer crumbs, chopped pecans, 1 cup confectioners' sugar, and the cocoa. In a separate bowl, blend the bourbon and corn syrup. Stir this bourbon mixture into the dry mixture; blend well.
Cover and chill for at least a few hours. Sift about 1/2 to 1 cup of confectioners' sugar on a cookie sheet. Shape small bits of the dough into balls and roll them in the confectioners'. Store in refrigerator in tightly covered containers. Make these a few days in advance for best flavor, and roll in confectioners' sugar again before serving, if desired. These can also be frozen for longer storage.
Makes about 3 dozen bourbon balls.

Bourbon balls
4 cups whole pecans or pecan halves
2 cup crushed or processed vanilla cookies (recommended: Nilla wafers)
1 cup confectioners' sugar
4 jiggers bourbon
3 tablespoons white syrup, (recommended: Karo)
Butter, for fingertips
Roughly chop the pecans in a food processor. Remove 2 cups and reserve. Finely grind the remaining pecans in the food processor.
Combine ground pecans, Nilla wafers, confectioners' sugar, bourbon, and syrup. Coat finger tips with softened butter to help you roll. Shape mixture into balls 1 1/2 inches in diameter using an ice cream scoop. Roll in chopped pecans. Arrange balls on a dessert platter and serve. Ask for help rolling. Four hands make very quick work of this dessert!

2 1/2 c. (about 5 dozen) finely crushed vanilla wafers
1 c. finely chopped pecan nuts
Powdered sugar to roll balls in
Melt chocolate over hot water. Remove from hot water and stir in sugar and syrup. Blend in bourbon. Combine wafers and nuts and add to chocolate mixture; mix well.
Form 1-inch balls and roll in confectioners sugar. Let ripen in covered container at least several days. Makes about 4 1/2 dozen. Will keep 3-4 weeks in tightly covered container!
