4 lb Chicken-serving size pieces
1/4 c Sake plus 2T
2 tb Soy sauce
5 3/4 c Chicken stock
16 Clams little neck in shell
1 tb Minced ginger
1 c Onions, green, chopped
3 c Rice short grain uncooked
1/4 c Cilantro leaves chopped
1 tb Szechuan Chili Sauce
1 lb Shrimp whole, raw
1/2 ts Saffron threads crushed
1 1/2 lb Mussels in shell
1/4 c Oil, olive plus 2T
1 1/2 tb Garlic minced
1/4 lb Sausage, Chinese pork
1 c Snow peas julienned
Shell, devein and butterfly the shrimp. Scrub mussels and clams and soak in several different changes of water until needed. Cut chinese sausage in thin diagonal slices and steam, 15 minutes. Pre-heat the oven to 350/F. Combine the chicken, chili sauce and 2 T of the sake in a bowl-set aside. Combine shrimp, 1 T of the soy sauce and 1 T of the sake in another bowl and set aside. Dissolve the saffron in some of the chicken stock and set aside. Heat 1/4 cup of the olive oil in a large skillet: medium high heat. Add chicken pieces a few at a time, cook until browned on each side. Set aside untill all are browned.
Pour off fat from skillett then add remaining (2T) olive oil, garlic and gingerroot. Cook for 1 minute then add green onion and cook 30 seconds more. Now add the steamed sausage and cook 1 more minute then add the rice and stir until it is all coated. Pour in the chicken stock, dissolved saffron, remaining 1/4 cup of sake and remaining 1T soy sauce. Bring to a boil and cook over medium heat for 10 minutes. Add the snow peas, shrimp and chicken pieces and cover with rice mixture. Arrange clams and mussels on top, sticking up so they will open. Bake uncovered at 350/F for 30-40 minutes or until clams and mussels are open. Sprinkle the cilantro over the top and serve from the pan together with green salad and crusty bread.

Seafood-Rotini-Cheese Bake recipe

Ingredients
8 oz Tri-colored pasta; cooked 1/2 -(up to)
1 cn (15-oz) tomato sauce 1 ts Dried basil
1 pk (10-oz) Crab Delights-flakes 1/4 ts Onion powder
1 c Fatfree cottage cheese OPTIONAL
1/4 c Fatfree parmesan cheese 1/2 -(up to)
2 Egg whites; beaten 1 c Grated fatfree mozarella
1 tb Chopped parsley Serve with warm stewed
1 ts Italian seasoning
Instructions
I usually just lurk here because Im a student, but I have more time in the summer. Heres a recipe based on one from Louis Kemp (maker of "Crab Delights") that I thought many of you might like. Spread 1/4 c. tomato sauce in bottom of 1 1/2 quart casserole. Top with a layer of cooked pasta. Next mix remaining ingredients *except* reserved tomato sauce, and layer on top of pasta. Top with rest of pasta and then pour remaining tomato sauce over pasta. Bake at 375 F. for 30 min. Top with fatfree mozzarella and parmesan if desired and place back in oven untill the cheese melts. Serve with stewed tomatoes.
Seafood Lasagna
1 pound cream cheese
3 scallions, chopped
1/4 cup milk
2 teaspoons Old Bay seasoning OR: creole seasoning
2 sweet red peppers, cored, seeded and finely diced
2 boxes (10 ounces each) frozen chopped broccoli, thawed, squeezed dry
3/4 pound crabmeat, shredded
2 eggs
1/2 teaspoon salt
1/4 teaspoon black pepper
1 jar (1 pound) alfredo pasta sauce
12 no-boil lasagna noodles
1/4 cup grated Parmesan cheese
Heat oven to 350° F. Grease 13 x 9 x 2-inch baking dish. Stir cream cheese, scallions, milk and Old Bay seasoning in large bowl until smooth. Stir in peppers, reserving 1/2 cup, and broccoli, reserving 1 cup. Add crabmeat, 1 egg, salt and black pepper. Whisk remaining egg into alfredo sauce.
Spread 1/3 cup alfredo sauce into prepared baking dish. Top with 3 noodles and 1/3 crab mixture. Repeat, layering twice with noodles, crabmeat, noodles, crabmeat. Top with 3 noodles; sprinkle with reserved red pepper and broccoli. Pour on remaining alfredo sauce. Sprinkle with Parmesan.
Bake, covered, in 350° F. oven 30 minutes. Uncover; bake 20 to 25 minutes, until browned and bubbly. Let stand 10 minutes.
