Fettuccine Alfredo
Ingredients:
Enough pasta for four people, about 1 pound uncooked.
4 tbsp. butter
2/3 cup heavy cream
1/2 cup chicken stock or broth
Sea salt and Fresh cracked pepper, to taste
2 large egg yolks
1/4 cup fresh Parmesan, grated
Procedure:
Cook the pasta until just underdone.
While the pasta is cooking, combine the butter, heavy cream and chicken stock in a pot large enough to hold the pasta and the sauce. Bring to a boil and reduce heat.
Season with salt and pepper.
Now add the undercooked pasta into the pot and return to a boil. This finishes the pasta and the sauce will be a bit thin.
Once the pasta is done to perfection and the sauce is still boiling, turn off the heat and add one of the egg yolks and quickly stir it in, then the other.
This will thicken your sauce. If it is too thick, add just a bit more stock.
Now add the cheese and toss well. Serve to warm bowls immediately.

Alfredo Sauce
Ingredients
2 c Cream or Whipping Cream
1 c Parmesan Cheese, freshly grated
1 Stick Butter
Instructions
In a souce pan, heat and melt the Butter, stir in Cream and add the Parmesan Cheese. Stir and heat until hot or becomes thick. Do Not Boil. After the Pasta is cooked, return it to a warm pan and mix with the Alfredo Sauce. Toss until well coated. Add more Parmesan if the sauce is to thin or more Cream it the sauce is to thick.

Alfredo Fettuccine
1 pint heavy cream
1 stick (1/2 cup) butter
2 tablespoons cream cheese
1/2 - 3/4 cup Parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
Salt and pepper, to taste
8 ounces fettuccine, cooked and drained
In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and garlic powder. Simmer this for 15 - 20 minutes over low heat. Toss pasta lightly with sauce, coating well. Leftovers freeze well.

Alfredo is NOT just a pasta sauce. I use this recipe to serve over baked chicken. It's also very good when using leftover chicken breast and broccoli florets. Just throw the chicken and broccoli into the sauce and heat! Yummy

The cream should be right in the milk aisle, it may be called heavy whipping cream 1¾ cups (400ml) heavy cream 6 tbs. unsalted butter 1 cup (240g) grated Parmesan cheese 1 tsp. salt fresh-ground black pepper Combine 1¼ cups (300ml) cream and the butter in a saute pan large enough to accomodate the sauce and pasta. Heat over a low flame, stirring frequently, until the butter is melted and the cream comes to a bare simmer. Remove the pan from the heat once the butter is evenly incorporated into the cream. Cook the pasta, draining it a little before it reaches the al dente stage. Add the drained pasta to the pan, along with the remaining ½ cup (100ml) cream, the cheese, salt, , and several grinds of the pepper mill. Heat the pasta and sauce over a low flame, tossing continuously, until the cheese melts into the sauce and the sauce slightly thickens, about 1 - 2 minutes. feeds 6 takes about 15 minutes.

Hi,
I did Lobster Alfredo on Saturday. I cooked and shelled the lobster, then with large pot of extra thick cream from sainsbury's in a frying pan or wok gently heated it, and added some French wholegrain mustard to taste(not over powering), and reduced to thicken. I heated the lobster on a plate over a pot of hot water so it did not over cook, and the pasta (three coloured for effect) was coated in Parmesan cheese, served with a Little sauce on the lobster and the rest in a sauce boat.

Simple recipe from The Frugal Gourmet Cooks American:
2 tablespoons of flour
2 tablespoons of butter
2 cups of dairy (skim milk, whole milk, half and half is my fave)
1/3 cup of parmesean cheese
Combine the flour and butter in a saucepan and mix over low heat until it's a brown ball.
Add the dairy. Stir until thick, but fo not boil.
Add the cheese.
OPTIONS:
-2 cans of crab
-more cheese
-hot sauce

"Noodles Alfredo" - 5 or 6 servings
8 oz. wide egg noodles
1/2 cup butter or margarine
1/2 cup light cream
1 cup grated Parmesan cheese
1 tbsp. parsley flakes
1/4 tsp. salt
Dash pepper
Cook noodles as directed. While noodles cook, heat butter and cream in small saucepan over low heat until butter is melted. Stir in cheese, parsley flakes, salt and pepper; keep warm over low heat.
Drain noodles and return to kettle. Pour sauce over noodles, stirring gently until noodles are well coated.
