It's hard to answer your open-ended question.
Start without a "kind" sentence in mind. With no aim, thoughts will flow in and you will be able to write something. Many times, when one looks at the card, their minds go blank. For this to work, stash away the card for a short duration rather than stressing your brains over it and let your mind work on its own. Once your thoughts are materialised, then pen it down on your card.

I like to begin with something friendly and not gift-related, i.e.: It was wonderful to see you at the shower (over the holiday, etc.). Thank you for the pretty (clever, cute, or some other adjective) _______. It will sure come in handy! (Or, if the gift is clothing, I enjoy wearing it and have already received several compliments on the color (style, detail, etc.) You are so thoughtful (or "You have such good taste)!
