It's hard to answer your open-ended question.
Start without a "kind" sentence in mind. With no aim, thoughts will flow in and you will be able to write something. Many times, when one looks at the card, their minds go blank. For this to work, stash away the card for a short duration rather than stressing your brains over it and let your mind work on its own. Once your thoughts are materialised, then pen it down on your card.

I like to begin with something friendly and not gift-related, i.e.: It was wonderful to see you at the shower (over the holiday, etc.). Thank you for the pretty (clever, cute, or some other adjective) _______. It will sure come in handy! (Or, if the gift is clothing, I enjoy wearing it and have already received several compliments on the color (style, detail, etc.) You are so thoughtful (or "You have such good taste)! Thanks again, (sign here).

I thinks it's nice to maybe talk about using and enjoying whatever you received
this is a common one, just an example: Thank you so much for the _______ gift card. I spent it yesterday, it's wonderfull to finnaly be able to shop for myself for once without feeling like I should be spending the money other stuff! I bought a ______ , a ______ and a _______ that ____________________________. Thanks again.

It is tricky without knowing what you are thankful for, or how close you are to the giver. You could try:
