The chicken breast was not cooked through, it was raw in the middle. I ate about half the breast (parmiagana). This was 48 hours ago (Monday, dinner). Had some stomach distress, nothing major (maybe nerves rather than illness), no fever, no nausea. Is there something one can do of a preventive nature when something like this happens?

Start eating yogurt. If you need to go on antibiotics you will have some protection from the side effects.

Take a little Pepto-Bismol and hold on. Most salmonella contamination is on the outside of the bird. It's never a good idea to eat under cooked foul. After about 12-17 hours after consumption you don't have any ill effect most likely you won't.
I like to par-boil chicken before cooking in a recipe. It help kills those nasty germs.

Eat a clove of raw, peeled garlic immediately when something like this happens. For the next couple of days I would do this about every six hours.

Call the poison center in your area, every city has one. Personally, I think you are through the worst of it - 48 hours - but it wouldn't hurt to ask.
