Mabo Dhofu

Ingredients

1 tb Vegetable oil
1 1/2 ts Sesame oil
1 ea Garlic clove, crushed
1/4 c Minced leeks*
1/2 ts Minced red peppers
4 md Mushrooms, sliced
1/2 c Water
1 1/2 ts Sake (optional)
2 1/2 ts Soy sauce
1/2 ts Salt
1 ds 7-spice red pepper+
1 1/2 ts Tomato ketchup
1 pk Extra firm silken tofu
2 ts Cornstarch
2 tb Water
1 tb Minced scallions

Instructions

Heat a wok & coat with the oils. Add garlic, leeks & red peppers. Stir fry over high heat for 15 seconds. Reduce heat to medium, add mushrooms & saute for 1 minute. Add water, sake, soy sauce, salt, 7-spice pepper & ketchup. Bring to a boil & cook for 30 seconds. Add tofu & return to a boil. Dissolve cornstarch in water & stir into the wok. Simmer until thick. Garnish with scallions.
* Or use minced scallions or onions
# I substituted a sherry
+ I used 1/4 ts of crushed chilies

There's a good salad that I have no idea what it's called. It has browned ramen noodles that had brown sugar on it. It was very very good. The crunchyness of it coupled with the sweet taste of the noodles and salad, was just delicious. Sorry I can't tell you what it's called. Maybe ask a question about that salad??

Cold Tofu Appetizer

1 pkt Lowfat Tofu cubed
1 tsp grated ginger
1 x scallions finely chopped
1 tbl soy sauce
1 tbl Rice Wine Sake

Divide the tofu into four cups. Mix together the sauce ingredients and sprinkle them on top. Flavor with chili pepper flakes if desired. You can also sprinkle the tofu with dried bonita flakes.

Steamed Tofu and Vegetables

1/4 cup soy sauce
1 1/2 tbl mirin or rice wine
1 tsp rice wine vinegar
1 tbl minced fresh gingerroot
1 tbl minced garlic
32 oz firm tofu, drained
and cut into 1-inch cubes
3 cup broccoli florets, small pieces
3 cup cauliflower florets, small pieces
2 cup thinly sliced carrots
4 x scallions, thinly sliced

1. Bring an inch or so of water to boil in pot fitted with steamer basket or insert. Cut four 12-inch squares of aluminum foil and lay them flat on work surface (or see Note below).
2. Combine soy sauce, mirin, vinegar, ginger, and garlic in large bowl. Add tofu to marinade and toss gently. Place one quarter of tofu cubes and marinade in center of each piece of foil. Crimp foil together to create four sealed packets.
3. Place broccoli, cauliflower, and carrots in steamer basket or insert. Place tofu packets over vegetables and steam over medium heat for 8 to 10 minutes, or until vegetables are tender.
4. Transfer each packet to shallow bowl. Carefully snip packet open with clean kitchen shears (to avoid burning yourself) and slide tofu and juices into bowl. Surround tofu with vegetables and garnish with scallions. Serve immediately.
Note: if you don't wish to wrap food in aluminum foil, use four small covered heatproof bowls that will fit on your steamer rack.
