It's the body's filter for the blood. It's very rich and tastes good, don't eat but in moderation and you should be fine. I love it, but it is kinda nasty when you think about it. A cow's liver should be fairly palatable if they don't drink a lot or use IV drugs :-)

Liver is a very nutritious food. The bad side is that it filters out a lot of "not so good things" in the blood. . The feed cattle today are treated with hormones and antibiotics so if you like liver, you're better of with calves liver as a young cow's liver has filtered out a lot less than a mature one.

Beef Liver is beneficial to the body. It is high in nutrient content. Beef Liver contains vitamin A, C, D, as well as the B-Complex vitamins. It is also rich in the minerals iron, calcium, copper, and phosphorus.

Technically, I don't think that liver is good for anyone.
It's an organ that "purifies" your body basically.
All the crappy things are stuck in it, in layman terms.

I wouldn't eat that.

Plus, I'm a vegetarian.

It's good for someone who is anemic, raises iron level in blood, , but it's also bad for your blood pressure and cholesterol.
