I was corrected by a pasrty chef to crack eggs on a flat surface not on the edge of anything.

The way to prevent shells in your bowl is to crack into on something different (counter, glass, another bowl)...the open the egg over the bowl intened to receive it. This will reduce the chances of getting shells in your egg.

I read somewhere that the best way to make one clean break in an egg is to tap it on the top of the table...or any flat surface...instead of cracking it on the side of a bowl. I've never tried it myself, so I don't know for sure...but it's worth a try!

You never crack the egg on the bowl you are using. Try cracking it with a butter knife or crack it on the edge of the counter.

Hit it on a rounded over edge, like a glass mixing bowl. For some reason sharp edges tend to shatter the egg shell. Just tap it with now follow through. It takes a while to perfect. I can do it one handed now.

I try not to whack it too hard. I find no matter what you crack it on, you don't have to smash the heck out of it. Then gently press on the crack with your thumbs til it gives then pull the egg open instead of pushing.

I tap it on the edge of the counter, lightly, in the middle, and then I turn it to the other side and tap it there too, so that it's easier to seperate. I never get shells that way.
