What are your favorite complementary fruits to eat with mango? Know of some interesting Recipes?
From PERSONAL experience.. I can look up stuff.. just trying to sort out some good ones easily..

Apple- and -Mango Salad with Grilled Chicken
GINGER VINAIGRETTE
2 tbl rice wine vinegar
1 tbl chopped chives or minced green onions
1 tsp grated fresh ginger
1/2 tsp salt
1/4 tsp freshly ground pepper
2 tbl sunflower oil
1/2 tsp salt
1/4 tsp freshly ground pepper
1/4 tsp cumin
1 pch ground red pepper
4 x boneless skinless chicken breast halves (about 1 lb.)
Vegetable cooking spray
8 cup mixed salad greens (12 oz.)
1 lrg mango (1 lb.), peeled and sliced
2 x Golden Delicious apples, peeled, cored and thinly sliced
1/4 cup sunflower seeds
Sesame flatbread (optional)

1. Make Ginger-Vinaigrette: Combine vinegar, chives, ginger, salt and pepper in small bowl; gradually whisk in oil.
Makes 1/4 cup.
2. Combine salt, pepper, cumin and red pepper in cup. Sprinkle over both sides of chicken. Lightly coat heavy grill pan or cast-iron skillet with vegetable cooking spray. Heat 1 to 2 minutes over medium-high heat. Cook chicken 5 to 6 minutes per side, until cooked through. Transfer to cutting board.
3. Toss greens, mango and apple slices with 3 tablespoons dressing.
Arrange salad on 4 individual dinner plates. Slice chicken and divide evenly over greens; drizzle remaining dressing over chicken. Sprinkle 1 tablespoon sunflower seeds over each salad. Serve with sesame flatbread, if desired.

I also like;

Avocado, Mango and Prawn Salad

Mixture of salad leaves and herbs ie: mint, basil, chives, coriander etc
1 x Avocado
1 sm Mango
100 gm Prawns
DRESSING
3 x Limes, juice of
3 dsh Worcestershire sauce
2 dsh Tabasco sauce
5 tbl Virgin olive oil
1 pch Caster sugar
GARNISH
4 x Prawns, shells on
Balsamic vinegar
Lime segments

First make the dressing:
Put 1tbsp of chives into a bowl and pour in the lime juice, Worcestershire sauce, Tabasco sauce and olive oil. Season with salt and pepper.
Split the avocado in half from top to base. Carefully remove the stone and skin, then slice lengthways and then in half.
Place in a bowl and pour a little of the lime dressing over the avocado. The acid in the lime will prevent the avocado browning.
Peel and chop the mango and put into the bowl with the avocado then add the prawns.
Top and tail the lime and add a little zest to the prawn, avocado and mango mixture. Remove the pith and take out the flesh. Place knife through the membrane to remove the soft flesh, with no skin or pith.
Season the fruit with black pepper and salt.
Take a scone ring and place it in the centre of the plate. Fill the ring with salad leaves and herbs. Flood a little dressing around the ring. Drop 3 drops of balsamic vinegar. Remove ring and place the prawn mixture on top.
Garnish with lime segments and prawns, shell on.

I enjoy allot of different curries. I make pickled mangoes all the time. Very simple to do and it goes well with other things besides curry. Its great on grilled chicken or fish. There are not that many recipes that call for a green or unripe mango but try this.
1 large green mango
1 small onion
1 clove garlic
juice of 1 lime
1/4 tsp salt
1 tsp cider vinegar
a few drops of hot sauce depending on taste (I use Jamaican)
1 TBS olive oil
1 tsp fresh cilantro
after peeling the mango grate it with the onion and garlic
add remaining ingredients and let stand for about 2 hours

I love mangos. My favorite way to eat (or drink) them is mango margaritas! I also like them in smoothies with strawberries and pineapple. A while back I had some dish with chicken that I think was marinated in mango and tequila and had bits of mango on top with pico de gallo. It was so good.

If you're into tropical fruits, papaya also goes well with it.

But mangoes really don't need any other fruits. Just add some lime or some red pepper.

And with raw mangoes, add some salt. WOOT!

Mango goes well with kiwi (if you are looking to pair it with a fruit). However, two of great recipes that include mango are: mango salsa, and mango with coconut sticky rice (a thai dish my wife turned me on to). The sticky rice with coconut and mango is out of this world. You have to try it if you like mango and sweets. Sounds weird, but its the bomb.

Mango and peaches go well together with peppers and a kick to it .
