I need a lot of help cooking, but I'm trying! Is my garlic too old to use if it has green in the middle when crushing it? How do I crush a garlic clove, anyway?

No, a little green is nothing bad. It is the start of the sprout. Just be sure to use it quickly.
Crushing garlic is easiest with the side of a chef's knife. Lay the garlic on a cutting board, put the side of the knife on the garlic, and hit the knife hard with your hand. It'll peel it and crush it at the same time.

Lay the flat side of your knife blade (a paring knife is too small!) on the garlic clove, and pound the blade with your (other) fist. Now you can chop the garlic as fine as you want.

"Roasted Garlic"
Cut the top off a head of garlic; place on a square of foil. Drizzle with olive oil and wrap. Roast at 400* - 45 minutes. Squeeze garlic from skin.
Bread Spread: Mash with olive oil, grated Parmesan cheese, salt and pepper.
Mashed Potatoes: Whisk in a little chicken broth; use in place of cream or milk.
Sauce for Chicken: Saute chicken breasts in skillet, then mash garlic in pan. Stir in broth, rosemary, salt and pepper. Boil to reduce to a syrup; pour over chicken.

It's not bad, but some people get indigestion when there is green.
(I prefer when there is no sprout at all on the inside) Sometimes the same clove will have pieces that have green and others that don't. To crush it, lay the flat side of a knife on top and give a little push.

If green in center do not use, plant it! From now on keep in frig. so it will last longer. To crush a garlic clove... peel clove, cut off both ends. Lay clove on hard surface, with broad side of large knife, lay on top of clove,smack top of blade with other hand. once should do it. If not repeat.

if the garlic is green, it is about to sprout. if you want to use it, don't wait until it sprouts it might be too old. and you can crush garlic by using a garlic crusher

The garlic is ok. Put a clove under a butcher knife and just smash it with your hand.
