2 tbl Oil
1/2 tsp Cumin
4 x Cardamom seeds
1 x Thai chile
2 x Cloves
2 med Onion, finely chopped
3 x Tomato, whole peeled
1 tsp Ginger paste
1 tsp Garlic paste
2 tsp Soy sauce
1 1/2 tsp Garam masala
1 tsp Chilli powder

Clean the chicken, making sure to cut off all fat. Heat the oil, then brown the cumin seeds and cardamom. Add the Thai chile (be careful of the fumes) and cloves. Add the chopped onion, then cook until brown. Then add the tomatoes, ginger paste, garlic paste, and soy sauce. Cook together until all has a pasty texture. Add remaining spices and mix well. Put in the chicken, and stir until coated well with the paste.
Cook for five to seven minutes, then add the water. Cover and cook until tender, about 20 minutes. Remove the chile before serving. Garlish with fresh cilantro and serve with cooked rice.

you're probable no longer letting the nutrition "rot" sufficiently to flavor sturdy. Did I say rot ... I meant marinate ... lol. i think of it is like sausage making. you could on no account make a sturdy sausage at domicile, because of the fact in case you extremely knew what became into in there you does no longer make it, no longer to point out devour it. My wager is that your spices are not clean adequate, or dealt with precise. as an occasion: Do you fry or toast the (finished or freshly floor) spices in oil first to launch the oil ... or do you basically upload them such as you have been including oregano to a pasta sauce? in case you do no longer "launch" the oils first you don't get the flavour from them. that's barely one element of technique which could make each and every of the version. as an occasion: the recipe demands yogurt. You circulate to the refrigerator and get some chilly bland sanitary thick yogurt with each and every of the flavour of faculty paste, while what you easily need is a few room temperature stinky runny domicile made cultures basically on the cusp between perfection and spoilage. by the way: Ask the eating place for recipes. Ask to demonstrate screen the kitchen. Many will say confident. as nicely what's the worst which could take place. they say No. i be attentive to the terrific Indian Vegetarian eating place with actually the worst nan interior the international. Why? they have a small kitchen and don't have the room for setting up a Tandoor (classic timber burning clay oven) in which you cook dinner the nan by easily slapping it onto the realm partitions of the clay cylinder. And without the main outstanding oven ... they themselves won't be able to make the nan flavor any sturdy the two. I basically watched an Indian cook dinner on nutrition television and she or he became into making Aloo Gobi so she began by frying the cauliflower in approximately an 0.5 an inch of oil ... however the oil became into the comparable oil she used to fry eggplant until now (needless to say including a style you will possibly on no account see written in any recipe) and she or he defined that throughout the time of a time-honored Indian kitchen they basically have one "wok" like pan that they might use to fry each and every of the dishes of the meal (which needless to say mingles and builds flavors too). in case you're like me, you're probable maintaining each and every thing clean, clean, and separate, and getting sterile consequences too.

Get a tin of Vindaloo sauce from some shop, most supermarkets have them.

Fry onions and meat, add sauce and let it bubble over for half an hour.
Cook basmati rice.

Eat and enjoy. (best next day)

You can´t make a better sauce than that yourself, hence the tin (Harwoods)
