As a SCUBA diver... Most of us don't actually do that roll off the back thing. You typically only do that from very small boats.
The normal entry is called a "wide stride". You take one big step, typically off the back of the boat. This gets you clear of the boat. But it requires the boat to be big enough to stand up.
If you're in a pretty small boat, you shouldn't stand up. You would have to climb out or slide out, and you're wearing too much equipment to really do that. So falling off backwards is efficient and is least likely to catch all your gear on something.
I've never done it that way, though. I've always dived off larger boats or from shore.
