Estimated Times:
Preparation - 15 min | Cooking - 9 min | Cooling Time - 15 min cooling | Yields - 60

Ingredients:

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup chopped nuts


Directions:
PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

PAN COOKIE VARIATION: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.

SLICE AND BAKE COOKIE VARIATION:
PREPARE dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in waxed paper. Refrigerate for 30 minutes.* Preheat oven to 375° F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies.

* May be stored in refrigerator for up to 1 week or in freezer for up to 8 weeks.

FOR HIGH ALTITUDE BAKING (5,200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake drop cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes.

This is a really quick simple recipe and yummy!!
Chocolate Chip Cookies

1 cup butter or shortening
1 cup brown sugar
1 cup white sugar
2 eggs
2 tbsp hot water
2 tsp vanilla essence
3 1/4 cups flour
1 tsp salt
1 tsp baking soda
1-2 cups chocolate chips

Preheat oven to 180 degrees.

Into the processor put the butter and brown and white sugar. Process until pale and creamy, then add the eggs, hot water and vanilla. Process until fluffy and scrape into a large bowl.
Sift together and stir in the flour, salt and baking soda. Stir in the chocolate chips. Drop teaspoonfuls on greased baking sheets and bake for 8-10 mins or until golden brown.

Makes 5-6 dozen.

This is my favorite recipe, from the New York Times.

Thick-and-Gooey Chocolate Chip Cookies

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons kosher salt
8 ounces butter, softened
1 1/2 cups packed light brown sugar
1/4 cup sugar
3 eggs
1 tablespoon vanilla extract
3 cups chopped bittersweet chocolate (chunks and shavings)
2 cups chopped walnuts (optional)

1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or Silpat. Sift together the flour, baking powder, baking soda and salt.
2. In a mixer fitted with a paddle, cream the butter and sugars until fluffy, 3 minutes. Add the eggs, one at a time, then the vanilla. Add the flour mixture all at once and blend until a dough forms. Fold in the chocolate and walnuts. Chill the dough.
3. Roll 1/4-cup lumps of dough into balls, then place on the baking sheet and flatten to 1/2-inch-thick disks spaced 2 inches apart. Chill the dough between batches. Bake until the edges turn golden, 14 to 17 minutes. Let cool slightly on the baking sheet, then transfer to a baking rack. Makes 30 cookies.

2 eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 to 3 cups semisweet chocolate chips
PREPARATION:
In large mixing bowl cream butter and sugars until light. Beat in the eggs and vanilla.
Sift together the flour, salt baking powder, and soda; stir into the first mixture, blending well. Stir in chocolate chips.

Shape into balls about 1 1/2 inches in diameter and place 2 inches apart on an ungreased cookie sheet.
Bake in a preheated 350° oven for 8 to 10 minutes, or until edges are light brown.
Makes about 4 to 5 dozen cookies.

2.In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
3.Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

Dark Chocolate Chip Cookies:

1 (12-ounce) package dark chocolate morsels

Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.

Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels. Drop by tablespoonfuls onto lightly greased baking sheets.

Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.

Yield: Makes about 5 dozen

I buy a package of Nestly Toll House chocolate chips and follow the recipe on back of the package.

You can also by a ready-made roll of cookie dough from Pillsbury. They are usually sold in the refrigerated section of your local food market. Nobody will know but me and you.

Yellow cake mix, a stick of melted butter, and one egg. Mix all that together and then add whatever else you want. I like choc chips, peanut butter chips, pecans, and coconut.
