I always thought tuna pot pies were the best - better than beef, chicken or turkey. I have not seen them around for a long, long time, like decades. Jeannie, I don't know why companies discontinue things that sell well. I also don't know why fish sandwiches and fish tacos are available only around lent at some fast-food restaurants, and are discontinued the rest of the year.

1 box Your favorite stuffing
1 can (12 1/2 oz) canned tuna, drained
1 pkg (10 oz) frozen peas and carrots
1/2 cup Chopped onion
1 can (10 3/4 oz) cream of potato -or- cream of mushroom soup
1/3 cup Milk
1/2 tsp Dried thyme -or- poultry seasoning
Preparation
1. Prepare stuffing; set aside
2. Spray Pam on a 9-inch pan
3. Combine remaining ingredients. Add salt and pepper to taste.
4. Pour filling in pie pan. Top with stuffing.
5. Bake at 375 degrees for 45-50 minutes or until bubbly.
Cook's Notes
Original recipe calls for 1 package of refrigerated all-ready pie crusts instead of the stuffing. My family likes the twist of the stuffing and I like the fewer calories.

Mix two cans of tuna, a can of cream of chicken or cream of celery, a bit of milk, and 2 cups of frozen mixed veggies. Use a frozen pie shell for bottom crust and a refridgerated one for the top. Poke holes and bake til the pie is browned. If you would like, put soup mixture in the microwave and heat up a bit before putting in the crust. This will decrease the baking time. I usually bake at about 400 degrees. This also works with chicken.

I have 3 Betty Crocker cookbooks, but cannot find Tuna Pot Pie!
I'll come as close as I can, and maybe you can do a little tweaking...
"Turkey Pot Pie" - 6 servings
1 (10 oz.) pkg. frozen peas and carrots
1/3 cup margarine or butter
1/3 cup all-purpose flour
1/3 cup chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 3/4 cups turkey or chicken broth
2/3 cup milk
2 1/2 to 3 cups cut-up cooked turkey or chicken
Pastry for 9" two-crust pie
Rinse frozen peas and carrots under running cold water to separate; drain. Heat margarine in 2-quart saucepan over low heat until melted. Stir in flour, onion, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat. Stir in broth and milk; heat to boiling, stirring constantly. Boil and stir 1 minute; stir in turkey and vegetables.
Prepare pastry. Roll 2/3 of the pastry into 13" square; ease into ungreased square pan, 9x9x2". Pour turkey mixture into pastry-lined pan. Roll remaining pastry into 11" square; cut out designs with small cookie cutter. Place square over filling; turn edges under and flute. Bake at 425* - 35 minutes, until golden brown.
"Crustless Tuna Quiche" - 6 servings
2 (6 1/2 oz.) cans tuna in water; drained
1 cup (4 oz.) shredded Swiss cheese
1 medium onion; chopped (about 1/2 cup)
2 tbsp. all-purpose flour
4 eggs
1 cup milk
3/4 tsp. salt
1/8 tsp. red pepper sauce
Toss salmon, cheese, onion and flour. Spread in greased pie plate or quiche pan, 9x 1 1/4". Beat eggs slightly; beat in remaining ingredients. Pour egg mixture over salmon mixture. Bake uncovered at 350* until knife inserted in center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.
