I get what you are asking. You want bigger muffins. Ok use the biggest pans you have. Do not use the rule for cupcakes and fill the muffin tine half full, fill them to the top. An ice cream scoop works well. Be sure that before you put the liners in the tins you spray the whole tin (top only of coure) with cooking spray that way nothing will stick even if they do overflow a bit.

That's how the pro's do it.

your muffins are not rising it could be any number of things:
batter over mixed
incorrect amounts of ingredients
oven temp too low.
one trick is to heat your muffin tin before you put the batter in
i found this recipe, this one is great because you can substitute almost any fruit you want for the apples. remember not to over mix

3 cup Flour
2 teaspoon Baking powder
1 teaspoon Baking soda
1 teaspoon Cinnamon
¼ teaspoon Nutmeg
¼ teaspoon Allspice
½ teaspoon Salt
1 ½ cup Brown sugar
4 Egg whites
1 cup Plain yoghurt
⅓ cup Oil
OR 1/3 cup applesauce
3 Apples, peeled and finely
Chopped

Preheat over 400°F. Grease 12 muffin cups. Using a fork stir flour with baking powder, baking soda, spices, salt and sugar in large mixing bowl. In another bowl whisk eggs with yoghurt and oil. Stir in apples and nuts. Spoon batter into muffin cups. Cups will be very full with batter heaped in middle. Bake 15-17 minutes. Leave in pan 5 minutes and then turn out.

Well, I would think that you need to be in a high-rise apartment building in order to make high rise muffins.

if you want it to rise add baking soda or baking powder
