I'm not sure that I can limit myself to one! Originally I was going to say Cheddar, but then I remembered Smoked Gouda, which reminded me of Mont. Jack/ Colby blend, then I thought about Pepper Jack cheese on a nice Triscuit, and now I'm so hungry that I'm leaving...

I'm a cheese fanatic and it changes often, but right now, my favorite is Havarti. Great for sandwiches!
