"Chicken Salad" - 3 or 4 servings
2 cups cubed cooked chicken
1/2 cup sliced celery
1/3 cup salad dressing or mayonnaise
1/2 tsp. salt
1/2 tsp. poultry seasoning
1/8 tsp. onion salt
Dash pepper
Combine chicken and celery in bowl. Mix salad dressing, salt, poultry seasoning, onion salt and pepper. Pour over chicken and celery; toss. Cover; chill 2 hours.
(If you like bacon, add 4 slices; crisply fried and crumbled, just before serving.)

This recipe was passed down from my grandmother and is one of the few things I will eat mayo in and the only CS I will eat.
Start with several whole chicken breast (one will make several ample sandwhiches!) and cook in simmering water (with veggies or canned chicken broth if you want to eat soup with it) until tender.
Shred with two forks or slice against the grain. Add finely chopped celery ( aprox 1 rib per breast)
Add mayo (can be slightly thinned with cool broth if desired) to taste.
Finally add cracked black pepper and salt.
I add a dash of ground sea salt and garlic for a zing! Enjoy with the soup for a great meal!

CHICKEN SALAD
2 cups boneless skinless chicken, cooked and chopped fine
3/4 cup-1 cup mayonnaise or miracle whip
1 tbsp. sweet pickle relish
1/4 onion, minced
2 tsp. prepared yellow mustard
1 stalk celery sliced very thin
Salt and pepper to taste
Combine all ingredients in a bowl, refrigerate at least one hour before serving.

BBQ Southwestern Chicken Salad:
8 cups shredded lettuce
1/2 cup canned black beans, rinsed and drained
1/2 cup canned corn, drained
1/2 cup light ranch dressing
2 cups chopped cooked, boneless, skinless chicken breast
1/3 cup bottled BBQ sauce
2 cups thin jicama strips or carrots
Prep time: 10 minutes
Cooking time: about 3 minutes
1. Put lettuce, black beans, corn, and ranch dressing in a large serving bowl and toss.
2. In a small mixing bowl, stir together the chicken pieces and the BBQ sauce.
3. Serve salads individually, with about 2 cups of the lettuce mixture, topped with 1/2 cup of the chicken mixture and 1/2 cup of the jicama strips.
How kids can help: Drain and measure beans and corn; measure and add ranch dressing; toss salad ingredients; toss chicken with BBQ sauce.
Yield: 4 servings

THIS IS YUMMY AND YOU CAN LEAVE OUT WHAT YOU DON'T LIKE
BLT CHICKEN SALAD SANDWICHS
3 cups chopped cooked chicken breast
5 slices bacon
2 stalks celery, chopped

3/4 cup mayonnaise
1 tablespoon chopped fresh parsley
2 tablespoons chopped green onion
1 teaspoon lemon juice
1 dash Worcestershire sauce
salt and pepper to taste
12 leaves romaine lettuce
1 avocado - peeled, seeded and sliced
DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside to cool.
Prepare the dressing by mixing together the mayonnaise, parsley, green onions, lemon juice, Worcestershire sauce, salt and pepper.
In a medium bowl, stir together the chicken breast, tomatoes and bacon. Pour dressing over chicken mixture and toss well to coat. Refrigerate until chilled; serve over lettuce leaves and garnish with avocado slices.
SOUTHWESTERN CHICKEN SALAD
INGREDIENTS
2 boneless chicken breast halves, cooked and cubed
3/4 cup mayonnaise
1/4 cup chopped celery
chopped fresh cilantro to taste
1 (1 ounce) package taco seasoning mix
DIRECTIONS
In a medium bowl, combine the chicken, mayonnaise, celery, cilantro and seasoning mix. Mix well.
Cover bowl and refrigerate for 1 hour.

I mix mine with mayo, diced onion, and celery. Add salt and pepper to taste. You can use canned chicken or chicken breasts that you bake or stew. One is as good as the other.
