Chicken Pot Pie
"A delicious chicken pie made from scratch with carrots, peas and celery."
Original recipe yield: 1 - 9 inch pie
PREP TIME 20 Min
INGREDIENTS
1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk
2 (9 inch) unbaked pie crusts
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C.)
In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

These are a family favorite at our house! So good!
Homemade Pot Pie
2 Freezer Pie Shells
1 can of Veg-All
1 can of cream of chicken soup
1 package or 1 can of chicken
Mix the veg-all, soup and chicken. Place in one pie shell. Place additional pie shell on top of pie shell with ingredients. Puncture the pie shell with a fork for baking. (This mixture will actually make 2 pies - will need 4 pie shells). The additional pie can be frozen until you are ready to bake it. Bake at 350 for 30-45 minutes - until golden brown. Also beef pot pie can be made by omiting the Veg-ALL and creamed soup, replacing those ingredients with Beef Stew or Campbells Chunky Veg Beef Soup.

I do this all the time and it makes for a great chicken pot pie. I also do it with puff pastry for a little something fun.
1 can of chicken - unless you have deboned chicken sitting around
1 med bag of frozen mixed veggies or you can use canned veggies (but the frozen taste better)
2 cans of cream of something soup -I like to mix it up for variety
cream of celery,onion,chicken,chicken w/herbs,asparagus...
depending on what I have on hand, I might add 1/4 cup white wine, dried rosemary or thyme, white pepper....
mix it all together. put into your pie crust. cover the pie with another pie crust and prick the top to let the steam escape.
bake @ 375 until bubbly. enjoy!

If you want any easy from "scratch" recipie start with fresh made chicken soup (or hot canned broth). To your broth add chicken, veggies to taste(using the carrots that was used to make the soup if so..). I take a mason jar or any container with a tight lid and add aprox 1/3 cup flour to 1 cup milk and shake up to disolve the flour. Add to hot broth mixture and stir until incorporated and thickened. Pour into crust top with other and bake until browned and bubbly. It helps to place pie on a cookie sheet as the filling can bubble up and make a mess in the oven. Enjoy!

two pie crust one for top and bottom then 1 can of mixed veggies {med can } drain the water off please two can of cream of chicken soup and boil some chicken breast then cut them up to the size bite you like and pour it into pie shell and then cover with the second pie crust and coat the top crust with plain milk {likebrush it on. and put a few cuts in a design so steam can get through} bake it in a 375 degree oven till light brown, Great and I usually do this when I clean out frig with all my left overs....Serve with garlic bits of sour dough french bread and tossed salad and a glass of wine,

buy frozen bag of mixed vegetables ground beef or chicken or turkey and gravy for chicken beef or turkey chilli sauce made by heinz and cook together add garlic etc. tasty put in the pie crust mash potatoes with cheedar and garlic and make sheperds pie with biscuits on the side
