It's when you burn something to offer it to a god or gods, usually on an altar made for this purpose - made of stone and outside. Many ancient cultures practiced this; it was believed that the smoke rising to heaven and the transformation via fire sent the essence of the grain or lamb or whatever, to the god(s).

Burnt offering was the sacrifice of a clean animal on the altar for the Jews, which they would then burn apart of the meat on the altar before God. This was a symbol of the death of Jesus Christ to come. After Jesus' death on the cross there is no need for burnt offering and sacrifices.
