I am honestly addicted to homemade salsa. I love it because it is fresh and preservative free. I make it almost everyday, because it's usually all eaten that same day! This is my recipe:
5 roma tomatoes diced
1 medium yellow onion (you can use a smaller one if you don't want it to be to oniony!) diced
1 bundle of cilantro (leaves only) chopped fine
2 medium jalapenos (give or take depending on your prefernece) diced
1 lime (juice)
1/2 tsp salt
Mix it all together, try it with Baked Tostitos, and this is a really healthy snack!
I just recently got a manual food processor which cuts down my preparation time to about 10 minutes, compared to almost an hour when I chopped everything by hand. I would recommend one! If you are using a food processor, then the pieces will not have to be cut as small - less work!
If you are using a food processor, this is the order I put in the ingredients.
1st-mix the cilantro, onions, jalapenos.
2nd-add the tomatoes - (I do this after the other ingredients because I like it somewhat chunky)
3rd-add salt to taste

"Mexican Caviar" - Serves 8 to 10
Combine the following ingredients and chill overnight:
2 (4 1/4 oz.) cans chopped olives
2 (4 oz.) cans chopped green chiles
2 tomatoes; peeled and chopped
3 chopped green onions (scallions)
2 mashed garlic cloves
3 tsp. olive oil
2 tsp. red wine vinegar
1 tsp. pepper
Dash seasoning salt
Serve with Fritos Scoops! Corn Chips.
"Pico de Gallo" (Fresh Salsa) - 2 1/2 cups
3 to 4 medium-size tomatoes; chopped (approximately 2 cups)
1 small onion; finely chopped
1 crushed garlic clove
1 jalapeno; seeded and minced
1/3 cup cilantro (parsley); chopped
1/2 tsp. salt
Pepper to taste
Juice of 1/2 lime
In small mixing bowl, combine all ingredients. Cover bowl with plastic wrap; refrigerate at least 1 hour to allow flavors to mix. This salsa is best served fresh, though it keeps for 2-3 days covered in the refrigerator.

Salsa Dip
Ingredients
1 red pepper
1 medium onion
2 cloves garlic
1 tin of chopped tomatoes
1/2 red chilli pepper
fresh basil
Chop the onion, chilli, pepper and garlic very finely. Open the can of tomatoes and chop the pieces smaller. Mix together with he onion mixture and refrigerate until needed.
When serving add fresh basil.

Salsa Fresca
4 ripe tomatoes
1/4 red onion
1 jalapeno (minced)
8 fresh cilantro sprigs
3 garlic cloves (minced)
Juice of one lime
1/4 cup olive oil
1/2 tsp salt
Mix and let stand 15 minutes before serving.
Best salsa I've ever had....try it with the lime flavoured tostitos!

you will never go back to regular salsa after eating this.
Cowboy Cavier
you will need
red wine vinegar
hot sauce
olive oil
garlic
pepper
1 large avacado
1 can black beans drained and rinsed
1 can corn drained
2/3 cup green onions sliced thin
2/3 cup fresh cilantro, chopped
1/2 lb roma tomatoes, chopped
1 tsp lemon pepper
salt to taste
Mix together
2 Tbs red wine vinegar
1 tsp hot sauce
1/2 tsp olive oil
2 cloves garlic
1/8 tsp pepper
add black beans, corn, onions, cilantro and tomotoes to vinegar mixture and toss gently to coat.
add avocados chopped in 1/2 inch cubes then toss gently.
add lemon pepper and salt to taste.
serve with tortilla chips.
You can tweak the ingredients depending on how mild or spicy you want it. I usually add more hot sauce and more garlic.

Mango salsa is the best. Peach salsa is good too.
INGREDIENTS:
1 cup diced fresh mango
1/3 cup roasted red peppers, drained & diced
1/3 cup diced red onion
1 jalapeno pepper, seeded, minced
2 tablespoons fresh mint, chopped
1 tablespoon fresh lime juice
PREPARATION:
Combine all ingredients and chill. Serve with grilled fish or chicken.
Makes 1 1/2 cups of mango salsa.

Aloha Salsa:
1 cup finely chopped fresh pineapple
1 cup chopped peeled mango
1 cup coarsely chopped red bell pepper
1 cup cubed peeled kiwifruit (about 3)
3/4 cup chopped red onion
1/3 cup minced fresh cilantro
2 tablespoons lime juice
2 teaspoons chopped seeded jalapeño pepper
Combine all ingredients in a bowl. Cover and chill for 2 hours.
Yield: 4 cups (serving size: 1/4 cup)

Well this is what i think of the names... 1. Quinton i think of horror movies... so i think "evil" whenever i hear it... and will get the nickname "quin"... 2. Vincent very italian sounding in my opinion, i knew 2 vincents and my friend knew one... one was dodgy, the other two commented suicide... Vince sounds like an old name too... 3.Trenton (Trent) i do like... 4. Trevor i know two, one is homeless and the other is a low life with no life and causes trouble for everyone... 5. Kevin (kev) i dont like the name, but is different... 6. Theo is different and i really like this name... doesnt sound to old or to young... Im not saying that this is how they will turn out, this is just what i think of when i hear the names... goodluck with your family and i hope you choose Theo :)

Take 3 tomatoes(large ones) cut them open en remove the seeds. Place them in the magimixer with a 1 tsp. grd. garlic, as much jalapenas you can stand and a sprinkle of salt. Turn it on and off until you get the texture you like.
Let it sit at room temperature to let the flavors blend and eat. Garlicky and delicious!!!!

Go with Not Here Recipie except use serrano peppers.
They are about the size of your pointer finger.
They don't taste as "green" as jalapinos, but have the heat.
Start with 2 peppers, then add more to meet your taste buds.
I use 4 or 5, but in Texas, we eat this stuff with breakfast.
