Apple Pie by Grandma Ople
"This was my grandmother's apple pie recipe. I have never seen another one quite like it. It will always be my favorite and has won me several first place prizes in local competitions. I hope it becomes one of your favorites as well!"
INGREDIENTS:
1 recipe pastry for a 9 inch double crust pie
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced
DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

Shredded Apple Pie
1 9inch Pie shell, frozen, unbaked
3 Granny Smith apples, approx.
Lemon Juice
1/4 cup margarine
1 cup sugar
1 tsp. vanilla
1 egg, beaten
Grate enough peeled apples to fill the pie crust. Sprinkle lemon
juice over the apples. Melt margarine and combine with sugar, vanilla, and egg. Mix well and pour over apples. Bake at 375 degrees F. for 40-45 minutes or until pie is set. Top with vanilla ice cream

PLACE 1-1/2 cups flour, 1/2 cup butter and 1/2 tub (250 g) Philadelphia Cream Cheese Spread in food processor. Pulse until mixture almost forms a ball.
2 SHAPE into a ball and refrigerate for 1 hr. or until well chilled.
3 ROLL half the pastry on lightly floured surface. Place in 9-inch pie plate.
4 MIX 6 peeled and sliced apples, 2/3 cup sugar, 2 Tbsp. flour and 1 tsp. cinnamon. Place in crust.
5 ROLL remaining pastry out and place on top of pie. Slit top then trim and pinch edges to seal. Bake at 400°F for 30 min.

let's hope he returns, but if not you could share the pie with someone else. This a very delicious one and different, for a little variety. It serves 8. -CARAMEL APPLE PIE:
1 box refrigerated pie crusts, softened as directed on box (fully defrosted)
1/4 cup finely chopped picans
(here's the fillilng:)
3/4 cup sugar
2 Tablespoons flour
1 teaspoon ground cinnamon
1 Tablespoon lemon juice
6 cups sliced peeled appples
(Now for the topping:)
1/3 cup caramel topping
1/4 cup chopped pecans or other chopped nuts
Heat oven to 425 f.
Make the crusts (use them) as directed on box for a 2 crust pie, using a 9 inch pie pan. Sprinkle the 1/4 cup chopped nuts on bottom of crust lined pan.
In a large bowl, stir togetehr the sugar, cinnamon and flour. Gently stir in the juice and the apples. Spoon into the crust lined pan. Otp with the second crust; seal edges and flute. Cut slits or shapes in several places in top the top crust. Bake 35 to 45 minutes or unti the apples are tender and the crust is golden brown. Cover the edge of pie crust with strips of foil after 15 to 20 minutes of baking, to prevent excessive browning. Serve with ice cream or forzen yogurt, if desired. Drizzle with the tipping; sprinkle with the nuts. Serve warm.

Dutch Apple Pie
Prepare a bottom piecrust; fill to heaping with peeled, sliced apples (about 6-7). Combine the following:
1 stick softened margarine
1 c. sugar
1 c. flour
cinnamon to taste
Firmly pack the mixture over the apples, covering as completely as possible. Bake at 350F., approx. 1 hr. or until apples begin to bubble

"American Apple Pie" - Serves 8
1/3 cup firmly packed light brown sugar
1/3 cup granulated sugar
1 tbsp. cornstarch mixed with 2 tbsp. lemon juice
1 tsp. cinnamon
1/4 tsp. grated nutmeg
1/4 tsp. salt
2 tbsp. lightly salted butter; melted
6 cups peeled, sliced apples
Pastry for two 9" crusts
1 egg yolk, beaten with 1 tsp. water
Preheat oven to 400*.
Mix sugars, cornstarch and lemon juice, cinnamon, nutmeg, salt and butter; sprinkle over apples and let stand about 10 minutes.
Roll out half of pastry and fit into 9" pan. Fill with apple mixture. Moisten edges with water.
Roll out remaining pastry; place over filling. Trim overhang and seal edges. Vent crust and brush with egg yolk. Bake 40 minutes.

OLGA's PIE CRUST:
4 cups flour
1 Tablespoon sugar
2 teaspoons salt
1 3/4 cup Crisco Shortening
1/2 cup cold water
1 Tablespoon vinegar
1 egg
Stir the flour, sugar and salt together in a medium size bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. In a small bowl beat together water, vinegar and egg. Add to flour mixture until the dough comes together. Gently gather dough particles together into a ball. Wrap in plastic, and chill for at least 30 minutes. Divide into 4 balls. Lightly flour sides of the ball and roll out on lightly floured board or pastry cloth. Makes two 9-inch double-crust pies. Note: Dough can be refrigerator up to 3 days. It can be frozen until ready to use; thaw until soft enough to roll.
OLGA's APPLE PIE:
6 cups Cortland apples
2 Tablespoons lemon juice
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
dash nutmeg
dash salt
1/4 cup flour
2 Tablespoons butter
Wash, peel, core and slice apples; put in a large bowl. Sprinkle with lemon juice to prevent darkening. In a small bowl combine sugar, brown sugar, cinnamon, nutmeg, salt and flour. Pour over apple slices and stir well to mix.
Arrange apple slices in pastry-lined pie pan. Dot with butter and place top crust on pie, seal and flute edges. Cut slits in the top to permit steam to escape. Bake at 450 degrees for 15 minutes. Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge. Continue baking at 350 degrees for 45 to 50 minutes or until apples test soft with a fork and the crust is golden brown.
Place a cookie sheet covered with aluminum foil on lower rack in oven to catch drippings.
