Not looking for anything fancy really and also im trying to cut back on food expense, i always end up buying frozen dinners etc which most of the time are crap portions. Im thinking of simple straightfoward meals like corned beef & mash with beans etc?
Im sure everyone ends up in the same rut when it comes to going round the local supermarket.

i know how you feel, same old food every week, i tend to buy alot of fresh chicken and use the jars of sauce, like spanish chicken, curry etc. look on the home pride website.

Cube some braizing steak-as much as you want. Throw into a pressure cooker and add cubed lambs kidneys-loads- which are cheap. Then add about 2 and1/2 pints water and bring to the boil. As you are waiting peel and cut up spuds, carrots and onions and add peas also and put top on cooker. Cook for 30 mins. When pressure has dropped take off lid and add loads of HP sauce and stir in to taste-probably about a third of a jar. Serve up and scoff. Should be delicious. If you haven't got a pressure cooker just bring to boil and simmer for an hour with a plate over the top and windows open to get rid of steam.

I go through this same dilemma all the time! here are a couple of dishes that I have made up recently: Stuffed pork Chops with blue cheese and bacon. Just mix up the blue cheese and crumbled bacon pieces and stuff the pork chops with the mixture. Just put them in the baking dish and put them in the oven at 350 degrees.
I also did this super easy dish: Chicken breasts covered in Ro-tel tomatoes. I put them in a baking dish in the oven at 350 degrees. For the last 5 minutes or so, I put cheese on top.
My boyfriend loved both of these recipes and now my parents and siblings make them too!

I also wanted to ask you a question. I saw your question about the Desperate housewives game, and i am having a similar problem. were you able to get it to run after changing the settings? if so, what settings did you change? Try a crockpot. Throw in a roast, a little broth from a can and some chunks of fresh veggies like potatoes, onions & carrots. Put it on low for 8-10 hours, voila! I put it all together at night, keep it in the fridge overnight and start it when I leave for work. Homecooked meal when I walk in the door! My friend makes a box of beef rice-a-roni style rice and adds seasoned ground beef or thin slices of steak to it. Also very good and quick.

Try making a simple Milanese pasta sauce.
Buy a tin of tomatoes, tomato passata jar form, onion, green/red pepper, garlic and mushrooms.
Chop all the veg up and fry them off in some olive oil then add the tin of tomatoes and 1/3 large jar of passata and reduce down on a low heat for 45-50 mins.
When ready serve with organic spagetti or any pasta.
Its cheap & simple to make and also very nice to eat !!!

I was in the same boat until I got a great book 'The Classic 1000 Quick & Easy Recipes' by Carolyn Humphries. Now I'm like Gordon Ramsay, only less sweary :)

Seriously, it has made me enthusiastic about cooking again and the recipes don't have hard to find or expensive ingredients either.

Sometimes, on the weekends, I will buy a whole chicken, roast it in the oven. That way I have cooked chicken meat (cheap too) for the rest of the week...

Add a sweet potato and veggies and you have a wholesome dinner. Or you can add it to a veggie chili, make a stir-fry, stew, cold chicken and avocado sandwiches.... Costs little, tastes good, and is good for you.

Sometime it can be very boring having to cook all the time. But I hate frozen food. I am lucky in that I like salads and fruit and pasta. Pasta is so easy to do and you can really make a sauce so easily. You can buy pesto and just add some raw tomatoes and olives etc to it.

I would keep offering her food at the table. At the table is key. She needs to understand that's where the family eats. As far as getting her to eat, I'm not sure. But my 1 year old son does the same thing. If I have ANYTHING to eat, he scurries over to me and wants a bite. It doesn't matter if he's just finished eating or anything. He wants what mommy has. But if he really does want something, I take him to his chair at the table and give him a small amount. If he's not really hungry, he'll fuss because I put him in his chair. I usually tell him that if he's hungry, he needs to sit at the table. If he wants to play, I'll put him down to play again. Consistency, as with just about anything relating to children, is key. My son loves anything we're eating. His favorite is probably chicken and rice. We do grilled cheese, scrambled eggs, toast, cooked veggies, etc. for lunch. He really will eat just about anything, so he's easy to please. Thankfully!

simple meal idea for you.chicken breast(you can buy these in packs frozen).chicken stock cube.creme Frasier or Greek yoghurt.boiled spuds for mashing or you can use pasta.first put some oil in a pan (recomend sesame oil makes chicken taste nutty an rustic)low heat,place breast in pan,chop mushrooms,onions,add to pan.let cook for a while keep turning chicken so it cooks evenly.if you use spuds to make mash add some of the crems fresh to it (makes it really light an gives it a good textuer,no lumps)boil kettle for stock cube,put stock in measuring jug,put some of creme fresh in stock,stir until the cream is not lumpy add to pan with chicken leave to simmer for a bit then serve.you can add different herbs if ypu want oregano is good.as i said before instead of mash use pasta.ihope this is useful.
