Well, apparently they do not understand the term "personal conviction". God gave us the animals to not only keep under our domination but also to eat (it is in Genesis...through the rest of the OT you can read about the stuff they weren't supposed to eat).
In the NT, it specifically states that it isn't what is put INTO the body that makes someone "unclean" - it is what comes out of our heart. Paul even spoke of eating meat made as a sacrifice to idols.

Some Christians see it as a moral imperative not to harm God's creation (or at least do as little harm as possible). God commanded that humankind be stewards of the creation. As stewards, it is the duty of humankind to make sure that God's creation is treated with respect and dignity. It would be hard to argue that the vast majority of animals that are raised for their meat are so treated. They often live short lives and are treated harshly and butchered inhumanely. These are the main reasons why most Christian people I know go vegetarian, and it makes sense to me. Their's is a more holistic perspective on the creation, I think, than merely seeing people as the Lord's over the creation, if that makes sense. Anyway, I hope that helps a bit.

In the old testament, there were many references to cleanliness of meat, however it was mostly in reference to pork, because of how dirty pigs are, but a lot of people interpret that as meat is uncleanly, hence meat is un-Godly. However, if they looked in the new testament, it says that you can eat what you choose as long as you pray over it. It's all in interpretation and picking and choosing what to believe.
