we just got a german short haired pointer....its not very old and since we leave from 7:00AM till 3:00 PM we cant watch her to make sure she doesnt potty in the house...so first we tried a small doggy crate and well she crapped all over herself in that every day so after a while we decided to lock her in the kitchen...and again she crapped and ran all in it and made a huge mess out of it...so i was wondering if anyone had any ideas on how to train her better with out a dog-sitter

No idea other than to have somebody come let her out every few hours or send her to doggy daycare where she will get regular bathroom breaks. It is unreasonable to expect a young dog to hold their bladder all day.

Is the crate too large? The crate should only be big enough for the pup to turn around and stretch out to lay down.
How old is the pup?
If the pup is very young it will need to be taken out every couple of hours. If that is not possible then your only choices are either to hire a dog walker or blocking the pup in the kitchen and use newspaper until the pup is a little older.
As for the messes that is what puppies do and if you can not find someone to take the pup out you just have to deal with it.

Take her out immediately after she eats and make sure she has a bowel movement before putting her in the crate or kitchen with a baby gate. You could hire a pet sitter to take her out at about 11am. They typically charge about 15.00 per visit.

How old is she? Puppies don't have full bladder/bowel control until 6 months of age or more.

Young puppies need to be taken out every 2 hours, after waking up, after eating/drinking and after playing to avoid accidents.

There is not way to leave a young puppy alone for that amount of time and not expect her to go potty.

well, u'll have to get it trained by a pet-sitter if u cant stay home for at least 3-5 days to supervise. im only 13. but im a pro at housebreaking dogs. ppl actually pay me good money to do it. and it doesnt cost me ANYTHING! except time. but i love animals and are very patient with them. i even know their different barks and slight body language. no kidding...really i can. anyway. Im kinda tired of explaining it to ppl. so this site will tell u.

You might want to try and let her outside to go to hte bathroom before you leave and as soon as you get home. That is how I trained my dog. It might take her just a llittle while to get used to waiting to go to the bathroom. And yoummight try encouraging her to use the bathroom on newspaper or puppy pads and when she uses the newspaper give her some type of reward.
