i also don't have a deep fryer or a lot of oil, so panfrying would be best for me.

I deep fry my catfish, but maybe my batter will work for pan frying. It's 1 cup of flour and a light beer. Season the flour well with salt, pepper, garlic and onion powders, Cajun seasoning, and cayenne. It comes out really puffy and light. My husband can't believe how it doesn't look like fish at a restaurant.

Try a tempura batter, or season,coat with egg and/or milk, and roll in flour.

try cream of wheat, mix it with egg and dip it in and fry it
