I am thinking of cooking them in a tomato sauce. Should I sauteed them first or just add them to the pot?

All meats are going to shrink when you cook them. The water is cooking out and you're left with the protein and other solids. It's really impossible to prevent shrinking. Also, if you add any salt (for seasoning) it's going to draw some moisture out as well which will cause some shrinkage.

If you want to minimize the shrikage, I suggest steaming or poaching, or braising. These methods involve water/liquid in cooking. Therefore you're not going to be losing as much.

This will shrink a little as some of the moisture cooks out and the flesh becomes denser. Try not overcooking or cooking in a soup base, like cioppino.

They shouldn't shrink much.

People tend to way overcook shrimp and scallops and calimari until they're tough. They probably do shrink.

Are you steaming or sauteeing or baking?
