here is a great one!!! I love this ..tastes like the loaded baked potatoes at restaurants! This recipe serves 12..

INGREDIENTS
9 baking potatoes
2/3 cup butter
2/3 cup all-purpose flour
6 cups whole milk
1/2 tablespoon salt
1 teaspoon ground black pepper
1/2 cup bacon bits, divided
4 green onions, chopped
10 ounces shredded Cheddar cheese
1 (8 ounce) container sour cream
DIRECTIONS
Prick potatoes with a fork and cook in the microwave, 3 or 4 at a time, and scoop out the flesh (while the others are cooking).
In a large saucepan over medium heat, melt butter. Stir in flour and cook about a minute. Whisk in milk, a little at a time, stirring constantly until thickened. Stir in potatoes, salt, pepper, 1/3 cup bacon bits, 2 tablespoons green onions and most of the cheese. Cook until thoroughly heated. Stir in sour cream and heat through. Serve topped with remaining bacon, onions and cheese.

INGREDIENTS
1/3 cup butter
1/3 cup all-purpose flour
4 cups skim milk
6 large baking potatoes, scrubbed
1 cup sour cream
DIRECTIONS
Microwave potatoes until done.
While potatoes are cooking make a roux over low to medium heat. Mix butter, margarine, or light olive oil, and flour. DO NOT BURN THE ROUX. When roux is thickened a bit, gradually blend in milk. Continue cooking over low to medium heat while preparing potatoes.
Peel and cut up potatoes. You may want to mash some of the potatoes also. Add potatoes to the milk mixture. Blend in sour cream. Soup is ready to be served.

Baked Potato Soup

Servings: 12

Ingredients:

5 lbs. (10 each) Idaho Potatoes
2-3/4 qt. chicken stock
3/4 cup margarine
4-1/2 cups onions, diced
2 cups celery, diced
1-1/2 cups flour
2 cups shredded cheddar cheese
3/4 cup heavy cream
3/4 cup cooked, crumbled bacon
3/4 cup sour cream
Salt and white pepper, to taste
1 cup green onions, chopped

Procedure:

Bake Idaho Potatoes. Cool, peel and cut into large chunks. Bring chicken stock to a boil. Melt margarine in a non-reactive pot.

Add onions and celery; sauté about 5 minutes. Add flour, cook 8-10 minutes, stirring frequently. Stir in chicken stock, blending well. Bring to a boil.

Add Idaho Potatoes; reduce heat and simmer 25 minutes. Stir in cheddar cheese, cream and bacon, heat through. Remove soup from heat, stir in sour cream.

Season to taste with salt and pepper.

Garnish each serving with green onions, additional crumbled bacon and herbs, if desired.

Baked Potato Soup:

4 large baking potatoes (about 2-3/4 pounds)
2/3 cup butter or margarine
2/3 cup all-purpose flour
3/4 tsp. salt
1/4 tsp. white pepper
6 cups milk
1 cup (8 ozs.) sour cream
1/4 cup thinly sliced green onions
10 bacon strips, cooked and crumbled
1 cup (4 ozs.) shredded cheddar cheese
1 heaping T. chicken base (optional)


Bake potatoes at 350 degrees for 65-75 minutes or until tender; cool completely. Peel and cube potatoes.
In a large saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually add milk (I add chicken base here). Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; whisk in sour cream. Add potatoes and green onions. Garnish with bacon and cheese.
Yield: 10 servings.

Its healthful in case you do not use various of milk or cream. in case you do not bake the potatoes then you definitely can't call it baked potato soup. i have made potato soup employing mashed potatoes. I upload them to a simmering liquid to thicken the soup.

Directions

1 PIERCE potatoes; microwave on HIGH 5 min., turning over after 2-1/2 min. Combine broth, milk and potatoes in large microwaveable bowl. Microwave on HIGH 6 min., stirring after 3 min. Slightly crush potatoes with a potato masher.


2 RESERVE 2 Tbsp. each of the bacon and cheese and 1 Tbsp. of the onions for topping; set aside. Add remaining bacon, cheese and onions to soup.


3 SERVE topped with reserved bacon, cheese, onions and sour cream.
