I knew, unfortunately. One of the reasons I'm a vegetarian. Almost all kinds of meat have a similar story, some things that if you knew would almost force you to be vegetarian, so just don't think about it.

I'm not sure where your BF is getting that information, but it's not necessarily true. When I make homemade sausage, I use lean, well-ground cuts of pork or venison -- never organ meat or scraps.
Years ago, sausage used to be made of trimmings from other cuts of meat when the animals were butchered. But even then, I don't think I've ever seen a recipe that uses hearts or lungs (except for haggis), and pork liver would give the sausage a really strong, unpleasant flavor.
I may be wrong, but I think your BF is having a go at you, trying to gross you out. Stuff like potted meat and Vienna sausage have less than yummy ingredients, but sausage links and patties are usually made from good cuts of meat.
Edit:
As far as sausage casings, they used to be made out of well-washed animal intestines -- that much is true. But today, most sausage makers use synthetic casings. The time and effort involved to prepare animal intestines for casings just isn't cost effective or worth it any more.

when I make my sausage, I use the heart, it is just a big muscle. And other trim parts of meat. But not hte lungs, they are way too mushy to use in sausage. Liver is too soft as well.
As far as that goes better not eat any more hot dogs, vienna sausages, or potted meat either. They are maid with the brains too! Read labels!

Oh I'm very well aware of what's in them. And I still LOVE sausage. I even have some intestines in the fridge right now for the next time I make sausage (I don't use random organs though).
For an interesting read, read The Jungle, by Upton Sinclair. Great book about the meatpacking industry.

Yeah...But it tastes soooo good. Who cares whats in it. I don't.
Same with hot dogs breakfast sausage and a lot of food I love.
As long as I don't work at the sausage making plant...I don't care.
And by the way...Some hot dogs and sausage aren't made with the yucky parts. Hebrew national hot dogs are all beef. (Kosher).
Next time read the label, if you're worried about it.

Just like the rocky mountain oysters I ate a few years ago not knowing what they were.......they were good I'll admit that, but I could never put another one in my mouth now knowing they are cow balls!!
