Cactus, you only have to give it water once for the whole winter.

I give mine water in November then I don't give water again until February.

A very easy plant to grow for your science fair project would be a tomato plant.

Go down to the hardware store and pick up regular potting soil - Miracle Grow soil is good. Also pick up a flourescent light (shop light). You can pick up a 2 foot light and the soil for less than $20.

Do NOT use a standard desk lamp type bulb. These are extremely ineffecient and do not produce enough light for a plant to grow.

The tomato plant is so easy to grow indoors you will be happy.

Spider plants are notoriously easy to grow and hard to kill. Provided you get adequate light and keep the plant indoors they sprout up quickly. I've also added a link with 5 other options but I personally don't recommend the Christmas Cactus.

i dont know that there is just one indoor winter plant
every year our spider plant does well and so does our wandering jew and if you have grow lights you can grow just about anything in the winter indoors
