Applesauce Cake

2 c Flour
1 1/3 c Whole wheat flour
2 ts Cinnamon
2 ts Baking powder
1 ts Baking soda
1/2 ts Salt
2 c Applesauce
1/4 c Apple liqueur
1 c Unsalted butter; softened
2 c Light brown sugar; firmly

1 c Raisins
1 c Pitted dates; chopped
1 c Walnuts; chopped

1/2 c Unsalted butter; softened
4 oz Cream cheese; softened
1 Navel orange; zest of
3 c Powdered sugar
2 tb Apple liqueur
Cake:
Preheat oven to 350°. Butter and flour a 10 inch
tube pan; set aside.
Sift flours, cinnamon, baking powder, baking soda
and salt; set aside. Combine apple liqueur and
applesauce; set aside.
Cream butter until light. Slowly beat in brown
sugar until very light and fluffy. Reduce speed to
medium, beat in eggs, one at a time, beating well
after each addition.
On low speed, alternately beat in flour and
applesauce mixtures, starting and ending with
flour, just until combined. Stir in walnuts,
dates, and raisins by hand.
Spread evenly in prepared pan, smoothing top. Bake
until cake tests done, about an hour. Cool in pan
on wire rack 15 minutes. Invert onto rack, turn
right side up and cool completely.
Cream Cheese Icing:
Beat butter and cream cheese until light. Beat in
orange peel. Reduce heat to medium; beat in sugar
alternately with liqueur until smooth and creamy.
Adjust consistency, if needed, by adding more
sugar or liqueur. Spread on top and sides of
cooled cake.

Applesauce Spice Cake
1/2 cup unsalted butter (2 sticks), room temperature
2 cups brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2 cups applesauce
1/2 cup raisins
1 cup chopped walnuts (Or pecans if you prefer.)
Powdered sugar
Preheat oven to 350 degrees F.
In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

Directions
Cream shortening then gradually add sugar; beating well. Add egg. Combine 2 tablespoons flour, raisins, and chopped pecans; set aside.
Combine 1-3/4 cups flour, baking soda, salt, cinnamon, allspice, ginger, and cloves. Add to the creamed mixture alternating with applesauce. Stir in the raisin/pecan mixture. Pour the batter into a greased and floured tube pan. Bake at 350 degrees for 40 to 45 minutes, or until the center is set. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.

Sugar Free Spicy Apple Cakes
Ingredients
100g vegan margarine
100g sultanas
100g self-raising flour
2 heaped teaspoons cinnamon
3 heaped tablespoons cooked apple
Beat the margarine until it is soft. Chop or blend the sultanas and stir into the margarine. Add the cooked apple (which should be very runny and sauce like) and stir well. Add the cinnamon and the half the flour and stir well. Add the other half of the flour and mix thoroughly. Spoon into cake cases and cook in a pre-heated 200 degree oven for 20 minutes. Makes 10 small cakes.
The apple and sultanas sweeten the cakes so there is no need to add sugar which makes them great for diabetics and those wishing to reduce their sugar intake. Sugar can of course be added if you feel the need.
Great served warm with vegan cream.

2 cups all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground cloves
1/2 cup butter (1 stick)
1 1/2 cups packed dark brown sugar
2 large eggs, at room temperature
1 1/2 cups applesauce
3/4 cup strongly brewed hot coffee
1 1/2 cups black raisins
3/4 cup chopped walnuts
2 cups powdered sugar
DIRECTIONS:
1. Make the batter: Preheat the oven to 350° F. Lightly butter and flour a 6-cup Kugelhof or Bundt pan. Whisk the flour, 1/4 cup cocoa powder, baking soda, baking powder, salt, cinnamon, allspice, and cloves together in a large bowl and set aside. Cream the butter and brown sugar until light and fluffy in a large bowl using a mixer set at medium-high speed. Add 1 egg, beating just until incorporated. Repeat with remaining egg. Reduce mixer speed to low and add the flour mixture by thirds, alternating with the applesauce. Scrape down sides of bowl and increase mixer speed to medium. Quickly add 1/2 cup hot coffee, beating until thoroughly combined -- about 30 seconds. Fold in the raisins and walnuts.
2. Bake the cake: Pour the batter into prepared pan and bake on middle rack of oven until tester inserted in the center come out clean -- 40 to 45 minutes. Place cake in pan on a wire rack and cool until slightly warm. Gently run a knife around the edge of the pan, remove the cake, and cool completely.
3. Make the glaze: Sift powdered sugar and remaining cocoa powder together. Make a well in the center and quickly pour in remaining hot coffee. Whisk until well blended and smooth. Pour over top of cake, allowing it to soak in. Serve immediately.
