I made a double batch of Oatmeal Raisin Cookies the other day and although they tasted yummy, they were pretty runny and seemed too buttery to me. The single recipe called for 1 cup of butter but I think in doubling the recipe, four sticks of butter is simply too much. Thoughts?

If it is still too runny, just add in more flour and oatmeal until it gets to the consistency that it should be. You might also choose to substitute half of the butter for the double batch with shortening. You might have to add a few tablespoons of extra water since butter is 20-40% water and shortening does not have any water in it. This would still make a creamy cookie, but not have such a rich and butter taste.

Do you mean that it is a very soft dough? As in "pasty"? The dough is fine. Not all cookie dough is firm. The recipe calls for a lot of butter...there is nothing wrong with this. The point I am trying to make is that the recipe has a lot of room temperature butter in it. This is why the dough is pasty. If you refrigerate the dough for about an hour before baking the dough will be much firmer and the cookies will not "run" so much on the cookie sheet while cooking.

So...long story short, try refrigerating your cookie dough before baking. It will work out just fine.
