The green apples, or Granny Smith's as they're called are the best because they hold up better during baking. They also have a slightly sour taste that goes well with the cinnamon sugar.

Definitely the green. The red ones are too sweet and have a tendency to turn to mush when cooked. (Hence why they're often used to make apple sauce.) I've read that yellow apples can be used as well, but I still think the green ones (granny smiths) are best.

Granny smith apples are really what should be used for desserts. Red apples have a tendency to get tart and dry. They are not good for apple pie. I'm really not to sure about gala apples but I imagine since they are similar to red you might get that same bitter tartness. I only use granny smiths for baking since that's what that apple is known for and I know I'm going to get a good result with it every time.

both! Saw a great recipe either on Good Morning America or the Today Show - they used 4 different types of apples. The flavors blended together for an incredible taste. I believe they used Golden Delicious, Granny Smith, Rome, and McIntosh.

I would suggest using the Red Macintosh apple, they cook up well(holding their shape) with good taste. A lot of apples will turn to mush when cooked in a pie, Happy Cooking,

Personal choice. I do not like green apples at all, yet many consider Granny Smith to be the best pie apple.

I like Northern Spy or Cortland apples for my pies. They are never mushy.

Color isn't the main factor, it's firmness and tartness. Granny Smith apples are the #1 choice for pies, they are green. Also good are Macintosh apples, they are red. Delicious apples (red or yellow) do not make good pies as they are not firm enough.

You should use apples specifically for cooking. Kinda both red and green they are (not meaning to sound like Yoda). But cooking apples hold their shape bette when cooking so you get a better texture :)

It doesn't really matter. My mother always mixed green and red apples together. I have a recipe that calls for Gala or Golden Delicous. Gala apples are red.
