We're having a potluck for one of my classes and Im in serch of some help. I need to make something for about 20 people and also something that would be easy to carry since parking is hellish at the college. Your help is appreciated!

OK, you're going to love this recipe-

Banana-berry kebabs

Ingredients:
About 6 bananas
One large package of strawberries (Driscoll's is best, I think)
I package of large marshmallows
1 package wooden skewers (look in the baking/cookware section of your grocery store)
1 can Dolce Frutta microwaveable dipping chocolate (in produce department of grocery store-usually by strawberries and bananas)

Directions:
Cut green tops off strawberries, leaving the rest of the strawberry whole. Set aside.
Peel and slice bananas into 1-inch thick circles (peel them as you go, not all at once, or they'll turn brown)
Take a wooden skewer and stick marshmallows, bananas, and strawberries on it in a pattern (marshmallow, strawberry, banana, marshmallow, strawberry, banana, etc.) Only use about 2 of each item per skewer, leaving half of the skewer as a "handle." Repeat until all ingredients are used up (about 25 skewers)
Microwave chocolate according to directions on package. Using a spoon, drizzle chocolate over each kebab in an artistic, zig-zag fashion. Chocolate will harden onto kebabs in seconds. DO NOT REFRIGERATE KEBABS, or the chocolate will get all melty and weird. It is best to do the chocolate part right before it's time to go to the potluck.
Now you have beautiful banana-berry kebabs- transport them to school in a really large Tupperware container for cakes (if you have one), or a foil-lined rectangular pan. Enjoy!!

You didn't say whether you had a particular 'area' chosen. (Potlucks are often divided into dessert, entree, appetizer, sides)

If you're not into doing a big ol' plate of cookies or brownies (easy to do 20 fancy-schmancy ones), or a salad or cole slaw (make these in a plastic bag, easy to carry, THEN put in the serving bowl and dress), that would leave side dishes and entrees.

Anything you can make in advance, cool, bag and reheat will make your life easier. One of my faves was swedish meatballs, as they require (cheap) ground beef, some fillers, canned mushroom soup and parsley (garnish).

Look up a recipe at Cooks.com. You'll find one you really like.

I had an old electric skillet (square, domed lid) that was light, and would hold a ton. I saw one the other day for $22. Easier to carry than a crockpot, they heat quickly and evenly, and are the absolute best thing to have when you're doing pancakes, frying LOTS of bacon or ham, or want to make onion soup (really!)

It even sat on the picnic table in the back yard for a fast shrimp stir-fry, or panfrying a couple of small steaks and a handful of mushrooms for a romantic dinner!

You could purchase a few pizza boxes from a pizzaria to transport this... and add any toppings you like.

Amazing Macaroni Pizza

For the Crust
1 2/3 cups elbow macaroni
4 slices (1 ounce each) American cheese, cut into strips
2 eggs, lightly beaten
2 tablespoons olive oil

For the Toppings
3/4 cup tomato sauce
1 clove garlic, minced
1 1/4 teaspoons dried oregano (optional)
1 1/2 cups shredded mozzarella cheese
16 slices pepperoni

Serves 6

Preparing the Crust
1. Preheat oven to 375°F. Bring a large saucepan of salted water to a boil. Add macaroni and cook until tender but still firm, 6-8 minutes. Drain pasta.

2. While pasta is still warm, return it to the saucepan and toss with American cheese and eggs.

3. Lightly brush a 12-inch pizza pan or ovenproof skillet with oil. Spread pasta mixture in the pan, pressing firmly with the back of a wooden spoon; bake crust for 10 minutes.

Topping the Pizza
1. Spread tomato sauce evenly over the pasta, leaving a 1-inch border around the edges. Sprinkle with garlic and oregano; top with mozzarella. Place pepperoni slices on pizza in a spiral pattern.

2. Bake pizza until cheese is melted and bubbly, about 20 minutes. Cut into wedges like a pizza, and serve.

taco dip.. yummy,,,,

2 (8 ounce) packages cream cheese, softened
1 (1 ounce) package taco seasoning mix
2 bunches green onions, chopped
1 (2 ounce) can diced black olives, drained
1 tomato, chopped
2 cups shredded lettuce
2 cups shredded Cheddar cheese
DIRECTIONS
In a medium bowl combine cream cheese, taco seasoning.
In a glass bowl or on a serving platter, layer cheese mixture, green onions, black olives, tomatoes, lettuce and cheese

Get some scoop chips and your on your way to an easy chip dip.. yummy... I like to make this because it's easy.. I line a heavy piece of cardboard with tin foil. Spread my mixture of cream cheese & taco seasoning over the tinfoil it acts as a platter... throw on cheese/olives/ whatever you want on there. When it's all done you throw away the cardboard (fake platter) and no clean up nothing.

A pan of five-layer dip and a couple bags of tortilla chips. Easy and feeds several people. Here are the directions I follow:

Start with a fairly flat saucepan and put a layer of refried beans on the bottom, then a layer of sour cream, then nacho cheese sauce, then peppers or chopped green onions, and finally a layer of shredded cheddar cheese. You can even add hamburger or anything else you feel like putting in it. Good luck!

um there are a couple things I can think of for you
!. Make a cake maybe a pound cake or a yellow cake with chocolate frosting.
2. Brocoli salad(its easy and delicious)
3. make some baked chicken wings or you can fry it.
4. strean bean casserole.
5. bring a soda or make Frappe which is sherbert and ginger ale mixed
6.make shishkabobs these are the most easiest thing you can make them with fruit(watermelon,grapes,cantelope or apples),vegetables or meat(like chicken,shrimp or beef) or use all 3!
7.Make chocolate dipped fruits.

Take a green salad,tomatoes,sliced onions,and black olives.Then put the dressings in a basket,and sit it next to the salad.Everything will keep very nice and fresh.You can carry the bowl and basket.Take the salad and put it in a gallon Ziploc bag.

You could make sandwiches, cut them in halves and carry them in a ziplock bag or in the bread sack. You could make cookies and carry them in a bag as well. Chips and dip is another idea that is easy to tote around. Deviled eggs, potato salad, cake, or Cornbread salad will go a long way as well but are harder to carry.

Bring a dessert! Brownies or Cookies are very simple to make, easy to carry and yummy!

bbq little smokies or meatballs done in a crockpot and mashed potatoes on the side.. i go to save-a-lot and buy the ingredients there cuz they're cheaper.. i use their honey bbq sauce.. hillshire farms little smokies or save-a-lot's frozen meatballs.. i use as much of the meat as i want and cover the meat with 2 parts bbq sauce and 1 part water.. i let it cook 4-6 hours on low heat.. i make instant mashed potatoes just prior to serving or taking this dish somewhere.. then i use the remaining sauce from the meat as a "gravy" for the potatoes.. hope this idea works for you..
