the best dish i have made is roasted parsnips in a shallow dish using mixed herbs with a drizzle of olive oil. Served with roast beef baked potatoesyorkshire pudding and two veg, and a rich beef gravy.

roast them on a sunday with a nice bit of beef, or some curried parsnip soup. Really easy to make.

I didn't actually make it, but Marks and Spencer used to sell a cook-chill vegetable dish which was parsnips with a Swiss cheese melted all over them and it was yummy scrummy.

I did parsnip and potato soup on monday night funnily enough.. (only cos i ran out of leeks) but it was very nice.
Parsnips arent my favourite but the flavour is better if roasted then drizzled with honey and parsley

I can't speak for best, but my yokel cousin up in Cheshire (oo arr) made parsnip wine, which tasted like tiger balm mixed with rotting brussels sprouts. Just sniffing it would frizzle the hairs of your a r s e. It was fcuking awful.
