It doesn't mean we are created in his actual physical form, it refers more to our very existence, or our spirit. Parts of us hint at what God is like, but of course because of sin we are a stained image.

Well God, as in God the creator, does not have a physical form, so it can't mean similar physical bodies. Then he must be talking about other characteristics. I believe it is other characteristics we, humans, have and the rest of animals/nature does not have (assuming that if it is mentioned that God created men at his image, He did not create anything else at his image).
Tt means that what makes us humans, is what we have in common with God. I can think of a few examples, such as intellect, ability to overwrite our instincts, to make decisions, to be creative, to have free will, to have a personality, a spirit that is not connected or predetermined by our DNA and would make us different than a identical twin, for instance. But this is not a comprehensive list. There must be so much more....

Our spirit, and the fact that there are three parts to us(body, soul, and spirit) as God is three (Father, Son, and Holy Spirit), is what is created in the image of God, not our physical body.

That sentence is not meant to be taken literally....it means that the soul is created in the image of god, it is spirit just as Diety is spirit. You are trying to make God/Diety smaller than it is...It is beyond human comprehension, so don't even try...
