Stewed Chicken:
In Dutch oven heat 2T Olive oil. Add washed chicken pieces and brown lightly about 5 min on each side. Add to the chicken a cut up onion, green pepper, 2 ribs celery, 3 tomatoes, cut-up carrots if you have them, 1T garlic or 1t garlic salt, and salt to taste. Cook another 5 minutes. Add 1/2 c water and cover. Simmer 15 minutes. You may add up to 1/2 t dried herbs such as thyme, oregano, cilantro or parsley. You may also add 1T flour to the cold water before you add it, and shake it in a jar to eliminate lumps, then add to the chicken for the last 15 min. cooking time if you want a little thicker gravy. Feel free to put a chicken buillion cube if you have it or substitute chicken broth in a can for the water.
Serve with white rice on the side or mashed potatoes, or serve in a bowl as stew.
Yum!

Sun-dried tomato and mushroom flan
Ingredients
vegan puff pastry
10 mushrooms
sun-dried tomato paste
soya milk
sauce flour
vegetable oil
salt
pepper
Grease a flan dish and cut a ½ cm thick piece of pastry that will fit into the dish and place it in it. Preheat the oven to 200 degrees.
Peel the mushroom and chop them into quarters. Fry them in 2 tablespoons oil until they go golden brown. Add 2 tablespoons of sauce flour and 1 tablespoon of sun-dried tomato paste and stir. Slowly add milk until the sauce just becomes as runny as you would expect the milk to be. Warm through for 5 minutes stirring well. Taste the sauce and add salt and pepper.
Pour the mixture into the flan dish and bake in the oven for about 20 minutes – until the pastry at the edges is risen and golden brown. Stand for 30 minutes before serving.

Do you like Pesto? It is the easiest thing to make with an electric chopper...or you can get it premade in most grocery stores. I like mine freshly made.
I toss cooked angel hair pasta (whole grain or spinach noodles) with a tablespoon of pesto sauce, also tossing in any halved cherry tomatoes.
Optionall:
toss in any veggies: frozen peas, or chopped/steamed brocolli, or steamed spinach.
toss in any meats: my favorite is marienated & grilled chicken breast sliced. Or shrimp.
Recipes for pesto can be found all over - the basic recipe includes: basil leaves, garlic cloves, either pine nuts or chopped walnuts, olive oil, and grated aged italian cheese (either parmasean, reggiano, romano, or asiagio)
