I have experienced this as well within my divison's potluck. What turned out is that some of my co-workers within our division told their friends in other divisions that our department had a potluck and invited them to grab food too. Sadly, there wasn't enough for everyone in our department to get a full belly. I told them those co-workers next time they do that, they better bring 2 dishes to make up for their un-invited friend's share.

Macaroni Pizza
For the Crust
1 2/3 cups elbow macaroni
4 slices (1 ounce each) American cheese, cut into strips
2 eggs, lightly beaten
2 tablespoons olive oil
For the Toppings
3/4 cup tomato sauce
1 clove garlic, minced
1 1/4 teaspoons dried oregano (optional)
1 1/2 cups shredded mozzarella cheese
16 slices pepperoni
Serves 6
Preparing the Crust
1. Preheat oven to 375°F. Bring a large saucepan of salted water to a boil. Add macaroni and cook until tender but still firm, 6-8 minutes. Drain pasta.
2. While pasta is still warm, return it to the saucepan and toss with American cheese and eggs.
3. Lightly brush a 12-inch pizza pan or ovenproof skillet with oil. Spread pasta mixture in the pan, pressing firmly with the back of a wooden spoon; bake crust for 10 minutes.
Topping the Pizza
1. Spread tomato sauce evenly over the pasta, leaving a 1-inch border around the edges. Sprinkle with garlic and oregano; top with mozzarella. Place pepperoni slices on pizza in a spiral pattern.
2. Bake pizza until cheese is melted and bubbly, about 20 minutes. Cut into wedges like a pizza, and serve.

Green bean casserole... The recipe is on the French's fried onions that you buy when making it.
I also just thought of the worlds easiest cheese ball.
2 packages of Philadelphia cream cheese... 1 package of zesty Italian dressing mix... allow cheese to stand and soften...mix in the dressing mix and form a ball... roll in crushed keebler crackers... chill in the refrigerator 2-3 hours and serve on a platter with assorted crackers. Serves about 25-30. You can double the recipe for larger groups

pasta salad! I am HORRIBLE in the kitchen, and even I can make pasta salad.
Boil those multi-colored spiralled noodles until their soft. One bag should do, depending on how many people you're feeding, of course.
Choose your add-ins like broccoli, olives, mushrooms, carrots, red onions, or pretty much any other colorful veggie you can think of (boil the broccoli and carrots just a bit so that they're soft to bite). Throw them all in with the noodles.
Last. but certainly not least, is add in 1-2 full bottles of Italian dressing (depending on how much you're making and how much looks good to you!) and lots of parmesan cheese. Ta-da! People will love it and think you're amazing! :D
Plus, it's so colorful with the colored noodles and all the veggies that it makes for great presentation too. Easy!

Take a block of cream cheese, pour Razzpotle sauce over the top and allow it to puddle a bit around the cheese. Serve with crackers (Wheat Thins, Triscuit, Carr's Water Biscuits, etc).

Triple Cheese Pasta Casserole
12 ounces tricolored corkscrew macaroni (rotelle)
1 16-ounce package frozen yellow, green, and red sweet peppers and onion stir-fry vegetables
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
2 tablespoons snipped fresh oregano or basil, or 1 teaspoon dried oregano or basil, crushed
3-1/2 cups milk
8 ounces smoked Gouda cheese, shredded (2 cups)
1/2 of an 8-ounce package cream cheese, cut up
1/3 cup finely shredded Parmesan cheese
Sliced plum tomatoes (optional)
Snipped fresh oregano or basil (optional)
1. In a Dutch oven cook corkscrew macaroni in lightly salted boiling water for 7 minutes. Add the frozen vegetables; return to boiling. Cook for 2 minutes more or until pasta is tender. Drain well.
2. In a screw-top jar combine flour, salt, pepper, nutmeg, dried herb (if using), and 1 cup of the milk; shake well. Transfer to a large saucepan; add remaining 2-1/2 cups milk. Cook and stir over medium-high heat until slightly thickened and bubbly. Gradually add cheeses, stirring until melted. Stir in cooked pasta and vegetables and fresh herb (if using). Transfer to a lightly greased 3-quart rectangular baking dish.
3. Bake, covered, in a 350 degree F oven for 25 minutes or until heated through. If desired, garnish with thinly sliced plum tomatoes and additional snipped fresh oregano or basil. Makes 8 cups (6 main-dish or 12 side-dish servings). Nutrition facts are given for side-dish servings.
To Make-Ahead: Chill the unbaked casserole for up to 4 hours. Bake in a 350 degree F oven for 35 to 40 minutes or until heated through; stir before garnishing and serving.
Potluck Tip: Bake the casserole just before leaving home. Wrap the hot casserole in several layers of newspaper and a heavy towel; place the wrapped casserole in a large cardboard box or an insulated container to tote. It should stay warm for up to 2 hours.

Get some little cocktail weenies (they're about $2.50 a pkg, and 2 or three packs are plenty) a bottle of bbq sauce and a jar of grape jelly.
Dump 'em all in a slow cooker. When you get to work, crank it up to high, and cut it back to low a couple hours later.
Don't put too big a spoon in the crockpot...they'll take less and there will be some for everybody.
Get a bottle of toothpicks for them to eat 'em with.

Usually anything in a crockpot is a hit...try making meatballs in a crockpot the day before, and just reheat the crockpot when you get to the office. Serve with little finger rolls.
