I have bought a buttersquash today and thought there would be some simple ideas on how to cook and prepare it, however there isn't? Can you help?

Do you mean butternut squash? If so, you can always cut it in half, stuff the cavity with seasoned sausage meat, top the meat with a few buttered crumbs, and bake at 375 until the squash is easily pierced with a fork and the sausage is done.

Or, peel the squash, cut it in chunks, and cook it until done. Mash with a little butter, milk or cream, and season to taste with cinammon, brown sugar, and nutmeg. Reheat the puree and serve as a veggie side. Or add a well-beaten egg and some pecans, mix thoroughly, place in a casserole dish, and bake at 350 degrees until heated through. Sprinkle lightly with cinnamon before serving.

I just cooked an acornsquash yesterday -- I'm sure they are pretty similar. Here is what I've read, if you aren't interested in adding bacon or other fillings:

1. Cut the squash in half (either way is fine, I believe).
2. Scoop out the seeds and throw them away.
3. In a shallow baking dish, add 1/2 inch of water.
4. Choose your favorite seasonings/spices to add to the water; I tried Cinnamon and Nutmeg yesterday, because I'm on a diet.. You may want to add a little sugar, butter, etc. Or, you could steer away from sweets and add salt, pepper, etc.
5. Place the squash in the dish, so that the skin side is facing up and the cut side is down in the water.
6. Bake in the oven on 350-375 for 30 to 45 minutes.
7. Test the squash for readiness by poking a knife through the skin into the middle. If the knife slides in easily, and the squash feels soft, it is probably ready.
8. Remove from the oven and let cool for about 10 minutes.
9. Eat right out of the skin! I use a spoon to scoop out the meat. It's yummy! I've also added brown sugar and butter to the squash at this point.

To cook:

Slice squash lengthwise. Using a spoon, scrape out the seeds and fibrous bits. Brush the cut side with softened butter and place, cut side down, on a foil lined baking tray.

Bake squash 45-55 minutes in a hot oven, 400 degrees F (gas mark 6) until the skin blisters and the flesh is very tender and soft when pricked with a knife.

When cool enough to handle, scoop out all the cooked flesh into a bowl. If it seems still quite wet, put the squash into a fine wire-mesh strainer, cover and balance over a bowl for up to 24 hours, until the moisture has drained.

To serve; (if cold; warm in a microwave oven) Simply mash squash with a generous knob of butter, two or three TBSP of dark brown sugar, pinch of salt and fresh ground black pepper - all are to taste.

Saw a fab, simple recipe the other day, tried it and it was scrummy.

Slice squash into 1cm wide slices (don't peel, but top, tail and scoop out the seeds/pulp). Brush with melted butter and olive oil, bung in over for 40 mins. Comes out all caramelised and sweet, very nice. The tough skin has turned much softer and is perfectly edible. No need for potatoes or any other starchy veg when you've got these. Recipe recommended placing sprigs of herbs (sage, rosemary, thyme) between the slices for extra flavour, but it's yummy enough without.

Is this the same as Butternut Squash? I just made this last week! I quartered it, took out the strings and seeds, and stuck it in the microwave to soften it in a safe container with plastic wrap loosely over the top for about 5-8 minutes. Then, I peeled it, and cut it up into 1 inch cubes, and steamed it for 20 more minutes. I then mashed it with some basil pesto and parmesean cheese. Yummy!

See the Sainsbury's website for the recipe Jamie Oliver cooks in the advert. It's roasted butternut squash with chestnuts, sage and panchetta. I cooked similar but added garlic and sweet potatoes and had it with cous cous a couple of weeks ago. It was so tasty - all roasted and mushy - really yummy. The bbc food website also has good recipes and a google search will probably throw up loads more.

Butternut Squash Curry

Ingredients

1 butternut squash
coconut milk
cumin
coriander
turmeric
1 onion
olive oil

Peel the onion and chop into small pieces. Fry gently until soft.

Add I teaspoon of turmeric, cumin and coriander. Fry slightly and then pour over some of the coconut milk.

Peel and remove the seeds from the squash. Cut into generous chunks and add to the mixture.

Cook until the squash is soft and add as much coconut milk as is necessary to keep the curry sauce thick and creamy.

My favourite way to eat butternut squash is with pasta. Peel and chop the squash into bite sized chunks (remove the seeds), roast in the oven with red onion, garlic, olive oil and salt and pepper. Meanwhile, cook the pasta. When the squash is nic and soft, mix with the cooked pasta and some grated parmesan and more black pepper. Delicious and simple!

Two ways I do it.#1 Split it down the middle,core it ,drench with olive oil salt it,put it cut side down on a cookie sheet and bake low until soft all the way through.Then turn over and let the cut side caralmelize a bit(Brown),take out sprinkle a little Ex.Virgin Olive oil and serve.#2 Large dice and fry with onions ,salt pepper and a touch of all spice.After soft and brown you can drizzle with Molasses,Maple syrup or brown sugar,or all 3!

I love just splitting them in half, take out the seeds and place on a baking sheet (middle up). Then sprinkle with salt, pepper, garlic granuals and add a knob of butter. Bake in a medium to hot oven. This usually takes about 1 hour depending onm the size.
