THe simple answer is - English

In fact, since there is nothing terribly remarkable about the language picutre in the state of Mississippi, I'm wondering it you are thinking of LOUISIANA --just the other side of the Missippi River. Louisiana has a distinctive set of dialects, due to its heritage as French colony == a French dialect ("Cajun" from "Accadien"), its own French Creole (like creoles in the Carribbean), and an "English Creole", influenced by the French Creole.

But it you are truly looking for info on Mississippi, here's a little bit:

1) A snapshot of the languages spoken in Mississippi.

Clearly the state is overwhelmingly English-speaking (and has, in fact, declared English as its "official language") with Spanish a distant second.

2) For the particular variety of Southern dialect and accent (called "Lower South" or "Gulf Southern" by various dialect studies), see:

People from Mississippi speak English. If this is a riddle, I would say the Mississippi river speaks the language of the Riverboat.
